So I'm on a low-carb diet but had some fettuccine taking up space in my pantry so I decided to use this recipe to rid of my pasta. I intended to eat a small portion and save the rest to give to my sister's family. Well...I followed the video to the "t" and it came out too too well. I couldn't stop eating it and ended up devouring the entire 12oz fettuccine box all to myself on a rainy Sunday evening. I Kept going back for seconds, thirds, fourths and so on. I was in Heaven! If too cheat on a diet, this is the best recipe for that ;)

We had this in Rome, last Thanksgiving! It was awesome! This looked so good, I finally made it! It was a different recipe w/o the broth. But turned out great. Next time i'm trying this one, because Fabio makes it look so easy! CIAO

This recipe is another very simple pasta dish that is among my favorites. Another favorite is pasta with olive oil and garlic. Some of the best Italian dishes are the most simple ones.

When I was in Italy for about 3 weeks ago did I learned that you are only going to use pecorino romano and just a little parmiggioano cheese..And about the pepper: They told me it should be whole peppercorn wich u should crush in a morter. They also only used pastawater for the sauce, not stock.

They taught you the right way, here's how a true italian makes it: Once the water's boiling, salt it and add spaghetti; crush a good amount of pepper in a mortar, then put it in a pan and toast it for a little bit WITHOUT ANYTHING ADDED, it depends on the smell, you'll feel it when it's perfectly toasted, anyway it's usually about 60/90 seconds, also move it a little bit while toasting. Once it's done, add a good amount of water from the pasta, and go for the max fire, cause you need to get the starch out of it. If the spaghetti need 10 mins to cook, then you're gonna remove them from the water at like half the time, so let's say 5 minutes earlier, to put them in the pan with water+pepper, DON'T THROW THE BOILING WATER, and start adding it to the pan, the pasta really need to swim in it, as it will release all its starch and create a cool and creamy sauce. Keep stirring the pasta as it will help starch coming out, and now this needs a little bit of experience: when you feel like the remaining water will be enough for the pasta to be cooked AL DENTE, then stop adding it, and just let the remaining water evaporate and get creamier as the pasta finishes cooking. Once you're done with the pasta, while keeping it a little watery, put it out of the fire and stir it a little bit so it gets a less hot, then you can add pecorino on top of it, go for a good amount and just keep stirring until all of the water gets absorbed and so does the pecorino. You can still balance either with more water or with more cheese as you keep stirring it. Done! No butter or anything else, just pasta, pecorino, pepper, water and salt. Sorry for any mistake, I'm italian!

Arthur Bondarelli I like to quickly heat half the pepper in a bit of olive oil first -this gives me a slightly different pepper taste from the fresh pepper I add at the end-set it aside after a minute of cooking and then add a bit of pasta water and just a smidge of butter to help emulsify. then toss in the pasta, cheese and the rest of the pepper. Never had lumps and a good creamy sauce, cheesy with two strains of pepper. I would like to omit the butter like you but I think if I did the sauce would not hold. I just use a tiny pat anyway. But this guy’s broth and tons of butter with such a small amount of pepper look awful. Maybe I m wrong.

Robert Hill For italians, oil and or butter are the worst mistakes when making Cacio e Pepe. You should try and get a creamy sauce without those: its trickier but its the right way. :)

Forchetarre skills are way up there ! But NO butter needed in Cacio e pepe . Just pasta pepper cheese and some starch water

I've been making this dish since I saw it on Chow Ciao, however, that recipe didn't use any broth. I'll have to try it that way. BTW. if I feel creative I'll add some diced prosciutto or pine nuts.

To Fabio's you tube staff: there was an older version of this recipe where he uses the water from the pasta instead of the broth. In that one, his explanation of the technique is really excellent. Is there any way to find that video? I have looked all over and can't find it ....

Hey Fabio! I learned to make Cacio y Pepe from you many years ago when you were on Yahoo. I've made it a hundred times since then, alway trying to get it right (yeah, you would have stabbed me in the neck with a fork a few times). Anyway, now I will try it with some broth to see if I can get it perfect -- yeah, like you!

fabio v, as the star of your video's you are the ultimate boss of the show. i m o / you can't sit down to eat until the table is set. you qued inappropriately to the producer Nick for being slow getting the fork and not blaming yourself knowing that you would be eating your grandfather's favorite dish, as you usually did with him. be the BIGGER MAN and apologize to NICK and everyone for your language. even though they beeped your 2nd phrase we all can read lips. if I heard my grandson talk like that i would laugh at him when i heard his grandmother calling him with 1 pointing finger saying come here and a bar of home made lye soap in the other hand behind her back.

Thanks for sharing! I think it's really important to educate people about some of the "foundation" recipes like this and not simply jump to more complex ones. Sure, there are other more fancy dishes, but "cacio e pepe" and "aglio e olio" shouldn't be overlooked. Many thanks - and I had to laugh about your comment about "stab you in the neck with a dull fork" for overcooking pasta.

Geez, self-appointed "crusaders for the puristic and original way", I simply can not stand them. BOT: I had both an "original" Roman serving of cacio e pepe and while I agree it was good, it had slightly too much pepper, which killed the more subtle flavors of the cheese, imho. And I did Fabio's recipe at home. I am not too fond of the broth in it, but toasting the pepper in a good amount of butter actually added quite a bit to the dish. It was more nuanced, since less pepper was needed, and the pepper had a chance to add to the cheese instead of borderline killing its flavors. I am doing it with butter and pasta water since then. For those who forgot: Cooking is all about discovering ones _own_ taste and not religiously following recipes "because it says so".

You do not have to follow a certain recipe, just follow your own taste... But if you're doing a video of a certain traditional recipe, with fixed ingredients, you just can't change them altogether. Experimenting with new recipes doesn't imply not using the to terms for the existing recipes

Broth and so much butter will dilute the cheese and pepper taste. And he only sprinkled in a tiny bit of pepper. A bit of butter, olive oil and pasta water gives you a creamy base that will blend well with the pecorino and more pepper. My guess is that this tastes bland as hell.

He's not. Neither are Mario Batali, Anthony Bourdain or plenty of other fans of the classic dish. Examples: 1. I’ve been in the wine industry over 20 years and never heard of Cab blended with Pinot. Then again I’ve never heard of cacio pepe without pepper, so who knows.

Il 3 febbraio 2017 Fabio è stato esiliato dall'Italia per il contenuto di questo video. Chef rubio stesso ha dichiarato in un intervista "Fabio's era in stato confusionale durante il video. Probabilmente il delirio era causato da quel "Vino" di dubbia provenienza". La scientifica conferma "abbiamo trovato tracce di burro,olio e sale FINO nel vino aperto dal presunto e poi anche in tutti i vini chiusi della cantina" . A Riccardo Rossi è morto il cuore vedendo questo video. Francesco pannofino ha commentato con un plateale "CANE MALEDETTO!" Tutti i romani sono indignati e sgarbi sta raccogliendo firme per fermare Fabio's nella sua missione di rovinare altre ricette italiane.

Guys, this is not cacio e pepe. This is a monstrosity. This is not how cacio e pepe is made. there is no butter in cacio e pepe and definitely no broth. The whole dish is basically butter. schifo
