Try this delicious and authentic Hyderabadi Street Style Falooda with Ice cream at home.
Recipe: Serves 2 people
Ingredients:
Full Fat Milk / Balai Wala Doodh - 1/2 litre
Sugar /Shakar - 2 1/2 tbsp + 1 tbsp
Sabza Seeds - 1 tbsp
Faluda Sev (make at home or use sheer korma sev or use readymade or skip it) - 1 tbsp
Corn flour - 1/2 cup
Sabza Seeds - 1 1/2 tbsp
Rooh Afza / Rose Syrup - 1 1/2 tbsp
Crushed Khowa / Mawa - as per the requirement
Vanilla Ice Cream - 2 scoops
Sliced Pistachios (optional)
Procedure:
1. Boil milk.
2. Add 2 1/2 tbsp sugar to milk.
3. Mix well and cook on medium to low flame till the milk is reduced to 3/4th of the quantity.
4. Soak sabza seeds in one cup of water for 30 min.
5. After 30 min of soaking, they will swell up. Strain the excess water.
6. For making faluda sev, you need a sev press, brush it with oil. Either make faluda sev at home using corn starch or use readymade sev or the sev that is available easily for sheer korma or skip it.
7. To a bowl, add some ice cubes. Add chilled water. Keep this in the refrigerator.
8. Mix 1/2 cup corn flour in 1 cup water. Add 1 tbsp sugar to corn flour and mix well.
9. Add this corn flour mix to a pan and cook on medium to low flame while stirring continuously till it attains a fine and thick consistency. Switch off the flame.
10. Add this thickened paste to sev press.
11. Press this hot corn flour paste through the sev maker into the cold water.
12. Refrigerate this sev still immersed in water and use within 2 days.
13. Now our falooda sev is ready.
14. It's time to assemble.
15. To each serving glass, add 1 1/2 tbsp sabza seeds, 1 tbsp sev and then 1 1/2 tbsp rooh afza.
16. Pour half of the milk that is nearly 3/4th cup.
17. Add crushed khowa or mawa.
18. Add 2 scoops off vanilla ice cream.
19. Drizzle with rooh afza.
20 Add some sliced pistachios, this is optional.
