❗️Attention, I recommend using ingredients in grams as this is a more accurate and correct recipe! * Cup = 200 ml
Ingredients
🍋 Shortcrust pastry:
2 eggs
a pinch of salt
120 g (heaped 1/2 cup / 4 oz) sugar
200 g (almost 2 sticks / 7 fl oz) melted butter
Zest of 2 lemons
480 g (3 1/2 cup / 17 oz) flour
10 g (2 tsp) baking powder
Cut off 1/3 of the dough for decoration
Baking pan 18x28 cm / 7x11 inches
🍋 Pudding cream:
3 eggs
70 g (1/2 cup / 2.5 oz) cornstarch
150 g (3/4 cup / 5 oz) sugar
750 ml (3 1/2 cup / 1 1/2 pint) milk
heat and stir until thickened
200 g (5 heaped tbsp / 7 oz) mascarpone
Juice of 2 lemons
Spread the dough out to a thickness of 2 mm and cut out small flowers or circles
Assemble the cake like in the video
Bake in a preheated oven at 180°C / 360°F for 35 minutes
Allow the cake to cool completely before serving
Powdered sugar and lemon zest (optional)
