Farmhouse Sandwich Bread

When I lived in England I used to love going to Sainsbury's on a Saturday and picking up a fresh Farmhouse loaf as a treat for the weekend. When I moved out of the country I then had to make my own bread that would bring a taste of home. The bread has a lovely crust on the outside and is wonderfully soft on the inside (63% hydration). It’s my go to recipe easy and quick to make in an oven and I think you will enjoy this recipe. Thanks for watching.
Ingredients
Strong Flour 500g
Warm water. 63% = 316g
Yeast 1tsp of yeast or 7g
Sugar ½ tsp
Butter 1tbs butter 15g
Salt 1 tsp
1. Mix the yeast with the warm water ( from the tap) and sugar and let it rest for 10min.
2. In a bowl mix your flour, salt and room temperature butter then add your yeast water and mix it altogether until it is roughly together then place onto a board and knead for 10min.
3. Put some oil into your bowl and your kneaded bread dough, and cover . Place in a warm place for 1 hour .
4. Empty your bread dough onto your board for the final time and flatten to release the air, then fold your dough and role up, making sure to pinch in the seams and place into your oiled or buttered bread tin, sprinkling a little flour on top. And let this rest for 30min.
5. Place into your preheated oven 200c for 20min then turn down the heat to 180 for the final 10min. Make sure to place some water in the bottom of your oven as this will help your loaf crisp up.
6. After 30 min place on a cooling rack for 10-20min and wait before diving in to eat some.
(I like a crusty outside so I cook at 200c for 20min the turn down and cook the last 10 min at 180c but if you prefer a light in colour loaf then just cook at 180c for 30 min.)

Is it two 20 minutes at 392.00F (200 C) and then 180 C for 10 minutes? Video and then then the description threw me off.
