I’m not kidding. I have found a lot of website with recipes, I follow them and tried, but sometimes the taste is off, or dont get the result as they shown. But, Marion is the only one I can fully trust 100%, and all end results are all great and best!

I've seen carbonara butchered in so many ways over the years, but as usual Marion didn't disappoint and really gave it justice. That's how you make carbonara. It looks amazing! I don't care if you use spaghetti, penne, udon, or any other kind of noodles. Just don't put cream or onions or garlic omg!

ripper recipe. I made this just last week, same exact method, but I used that fettuccini type pasta that is smooth on one side and ribbon on the other. It held the sauce brilliantly.

No one really knows where noodles originally came from because we where not born yet and no one kept records like they do today. so saying that makes you sound real arrogant. Others say Italians, where the first. Who really cares at that point. Lets enjoy them and the hell with the history lesson :)

Italian fan here ✋🇮🇹😍 it looks delicious!! When i make carbonara i just use eggs yolk, usually one per person, and by adding a mix of pecorino and parmigiano i get the "carbocream" 😍

Yes .." Pecorino would be great " because it's part of the original traditional recipe not parmesan ( which to be fair ,is fine too ) . Looks great by the way.

I have just came back from Japan and eating carbonara udon was one of the higlights of the trip. Thank you for posting this recipe! Also a big plus for not butchering carbonara's ingredients

I made this for dinner last night. It was delicious! After we started eating we realized that it became a little thick so we added a small amount of the reserved pasta water, mixed it in and it was perfect. The recipe is for four servings - we used it for two servings which was a bit much for us because it is a VERY rich dish. Split it into four and it will be the perfect amount! Does anyone know what the best way to reheat leftovers would be?

Omg I totally did this once last year before keto when I had some udon and I didn’t have bucatini!!! Mine looked ummmm .... not as great but the chewy noodles really adding something when mixed with the creamy texture of the sauce, I didn’t have pancetta so I just used “thick” cut bacon 🤦🏿‍♂️ Actually it sounds like I made a completely different meal, please don’t like this 😭😭

for our dinner i just made a beef mince pasta using a jar of ready made spinach and ricotta with tomato sauce. it has beef stock, milk, onion and garlic, 1/2 a can of Heinz ham flavoured baked beans and a table spoon or so of my blended spice mix, also used some short curly pasta noodles. your noodles looks really much better then mine. wanna swap?

I just made this and the texture of the noodles fit so well with the sauce. On top of that, the portions are easy to gage because the noodles are already pre-packed. I would like to know if it's normal that I end up with a pool of sauce at the bottom of my pan every time. Am I doing something wrong? I feel like the amount of sauce might be too much for just 2 packs of Udon.

I don’t get how you made cooking udon look so easy.. 60s? I use the same-looking packaged udon. It takes FOREVER for it to break apart in boiling hot water. Like, at least 4+ minutes. More often than not, when I try to shake it apart, even gently, the strands would abruptly break off (as in, one strands turns into two). It just feels that the udon strands are stuck so tightly together. :/

I would sit there and say okay what's Marion got us for dinner today some days. I asked my husband what we were having for dinner tonight and he said see what Marion's got going lol. Italian restaurants are common in Japan and pasta from one of these is a great reasonably priced meal. A lot of the chefs have trained in Italy so they know what they are doing. What is different is that some of the options incorporate distinctively Japanese ingredients such as mentai (spicy fish roe) or nori. I don’t recall seeing udon noodles being used but I suspect that is because I was not looking. In any event, having recently learned how to make an authentic Italian method carbonara, I will definitely try making it with udon noodles! This is definitely something true to the spirit of carbonara. Well done Marion for putting this out there. A lot of people are going to be very happy.

I’ve been making udon carbonara for years now - except I add in some white miso as well. Italians will hate me for it but the umami kick is unbeatable!

Please answer my question --it's genuine. When you make a sauce like this with eggs, does it smell of raw eggs when you eat it. I really love carbonara and love eggs but have never dare to make it at home because I'm not sure of the smell.
