Feed your gut. Episode 2: Kimchi

Put down the probiotic supplements and make this fermented goodness instead!
Recipe below:
Ingredients for main mix:
[ ] Napa cabbage
[ ] Radish
[ ] Carrots
[ ] Spring onions
Ingredients for kimchi paste:
[ ] Paprika
[ ] Ground chilli
[ ] Onion
[ ] Garlic
[ ] Ginger
Ingredients for porridge
[ ] Brown sugar
[ ] Water
[ ] Soy sauce
[ ] Rice flour
Instructions:
1. Wash then quarter the Napa cabbage
2. Salt the cabbage and leave for 30-60 mins until it shrinks in size
3. Rinse wilted cabbage thoroughly
4. Whisk rice flour, Water and brown sugar and bring to boil.
5. Let this mixture cool and add soy sauce
6. Blend together onion, garlic, ginger, ground chilli and paprika to make kimchi paste
7. Combine this with porridge to thicken it
8. Add this thickened kimchi paste to a bowl consisting of sliced carrots, radish and finely chopped spring onion and mix well
9. Then pour this into a large bowl containing the cabbage and mix well
10. Put into a watertight jar and leave at room temperature for 1-2 days to kickstart fermentation

Whenever I hear that kimchi is good for the gut I think we Eastern Europeans must have an extremely diverse microbiome from all the sauerkraut and pickled vegetables we eat. Then I remember how prevalent antibiotics usage even for minor colds is here and then I get back to reality 😂

@@bogdancondicaru7848there isn't really "bad bacteria". Gut microbiome research is in its infancy. Many bacteria that are traditionally bad for us like E coli can be very very good if it is in our gut in small quantities. There is so much complexity

You can go to the channel of Maangchi for the amounts. I use her recipe but decrease the spice level. Lol.

Woah I was actually thinking about making kimchi myself today and was a bit hesitant because of not knowing what container to use. But I have those jars!!! After watching K-dramas and needing to know why they eat Kimchi so much, I bought some and I have been obsessed but it can be quite pricey. But I'm going to make it now!!!

A top kimchi tip for UK-based chums: If you can't find "napa cabbage", it is just another name for chinese cabbage or chinese leaf. I went to 5 different asian supermarkets looking for napa cabbage before I found this out.

Omg I love kimchi! I do 5-7 day fasts (autophagy is where it's at babes!) and kimchi is my favorite way to break a fast! Also, it's freaking delicious! And thanks for this recipe! Most are just Napa cabbage, salt, and spices! I love that you added other veg to the mix!

Yogurt is quite the strong probiotic as well. Especially traditional Bulgarian one. The only one containing Lactobacillus Bulgaricus.

Some weeks ago I ordered Kimchi in a Korean style restaurant, and by god, I felt like this was the hottest and the same time most delicious thing I have ever eaten. And while my stomach rebells against too much chili, it can handle loads of ginger just fine, and I know other people who have the same experience. Is there a good explanation for this?

Hey doc, love the series! Question: do you have any opinions/guidance/tips on healthy salt intake? I love to cook a lot, but 'cooking youtube' often encourages the use of quite a lot of saly. Now, I always was taught that too much salt is very bad for you, but while cooking I also often find that using significantly less salt than the recipes state will make the food taste bland... Any thoughts are appreciated!

Not always, depends how much vinegar etc used that can kill bacteria. Also salt content needs to be watched!

I'm struggling with bile acid malabsorption. Was sent to dietitian, had phone appt in lockdown and nothing since, was told to follow low residue diet and to Google it.... I wish I was kidding 😢

What is the purpose of the rice flour porridge? I make kimchi (I'm on my 3rd batch) but I don't use the "porridge"; does it do something significant or is it just a "traditional" element? Great videos btw thanks 😊

Hi dr karan, i always had this question and i would be very pleased to get this answered because I always wondered pro biotic food is ones that have beneficial bacteria but wouldn't most bacteria just not survive the processes it will face till it reaches the gut? Do probiotic food need to be fermented or could it just have the components needed to feed the already existing bacteria in ur gut

Actually, Korea has the highest rate of stomach cancer worldwide. This is believed to be due to the high amounts of kimchi, miso and pickled fish that they eat. So this might not be the best way to go.
