If you can buy or borrow a Tirfor winch, that will make downing hang-ups a great deal easier. Set the anchor point high, so it both lifts & pulls the butt of the tree. One trick is to notch the hinge of your cut on the side where you expect it to hang on, which it allows it to roll out & down.

The head is a very vascularised area, any cut or scratch that breaks the skin will bleed as if there's no tomorrow :) Ask me how I know :)
