A couple of sad lettuces can be made into delicious lettuce soup: clean, chop and boil the lettuce, add some milk (I add plant milk, because it's easy to make at home and I don't usually have animal milk on hand), take off heat, add 2-3 finely chopped cloves of garlic, 2-5 tbsp vinegar (to taste) and, optionally, liquid smoke - or, add your own smoked dehydrated veggie at the start.
