Here comes another frequently asked recipe. Even though this is not a must-have dish for CNY dinner, but the season of the Mustard Green is always around CNY, so I always make it around this time. It takes about 21 days to ferment, so if you like fermented mustard green ( 酸菜), make it now!

Salt x 200g (Rub & Brine)
Mustard Green x 2600g

Why is it bad if a leaf comes off? It won’t ferment? I’m confused as to why it won’t work? Can you help explain to me please? I’m new to fermenting

Great question! Those loose leaf sometimes can get rotten more easily and ruin the whole jar. Hope you enjoy your fermenting journey!
