Yo I had the same exact problem with the paddle-shifter not moving with the wheel! I found myself fumbling mid-corner to up-shift and would lose time. What I ended up doing is only using 4th gear for the majority of the course. The only time I used 3rd gear is in the final hairpin corner before the straight. The only time I used 5th gear is on that main straight. Everything else was 4th gear. The turn 1 chicane, everything after that until the final hairpin, 4th gear. It might not be the 100% perfect solution for the best possible lap time, but it allows you to focus on your driving without having to worry about shifting. The car has plenty of torque even in 4th gear.
