All you need are a few simple ingredients and you'll have a hot & delicious flavor packed one pot meal. Easy on the wallet too & we can all use that!
Chicken Adobo
6-8 Boneless Skinless Chicken Thighs (you can use whole Bone-in skin on thighs if preferred)
1 large Onion, cut into large pieces
6 whole cloves, Garlic
1 Tablespoon whole Black Peppercorn
2-3 Bay Leaves
6 whole cloves Garlic
½ cup White Vinegar
1/3 cup Soy Sauce
About ¼ cup Water
2 teaspoons canola, vegetable or any neutral flavored oil
Will need large pot with lid. If no lid- can use a plate that will cover pot completely
Cut each chicken thigh into 3-4 pieces. In large bowl add chicken & all of the above listed ingredients except the water. Cover & refrigerate for 1 hour.
Add everything to pot, spread chicken out evenly. Add ¼ cup water. Bring to boil, then reduce to medium heat, cover & cook for 30 minutes. After 30 minutes, uncover & continue to cook until liquid is reduced to almost a glaze- about 25-30 minutes stirring occasionally.
Remove bay leaves & serve with hot steamed rice. You can avoid the peppercorns as you eat the Adobo, unless you like a peppery punch!
