Making this in the rice cooker is a game changer. Enjoy!
Mexican Red Rice (Arroz Rojo)
1 cup Long Grain White Rice, Rinsed well & drained
½ Onion, chopped
1 clove Garlic, finely chopped
2 cups Chicken Broth (can substitute Vegetable Broth)
3 Tablespoons Tomato Paste
1 Serrano Pepper or ½ Jalapeno Pepper (optional)
2-3 Tablespoons neutral flavored Oil, like Canola
1 teaspoon Kosher Salt
Combine broth, salt & tomato paste, stir until dissolved & set aside.
Heat saute pan medium heat. Add in oil and let heat up then add the rice. Cook stirring often until rice starts to get light golden brown, about 5-7 minutes. Add in the chopped onion & garlic & continue to cook for a few minutes until fragrant & onions are starting to get a little translucent. Remove from heat & add to rice cooker.
Add broth mixture to rice cooker & give everything a good stir to combine & to also level out the rice. Nestle the Serrano/Jalapeno right on top of the rice. Cover & cook to your rice cooker directions. When rice is done, discard the pepper, remove cooked rice to larger bowl & gently fluff with fork or rice paddle. Serve
