Word of advice, Liza…you shouldn’t tolerate the kids playing on the kitchen counter for two main reasons; their safety and for health/sanitation purposes. The kitchen counter is a place for food preparation, keep it free from contamination. I hope you don’t mind this words of culinary wisdom.
it's a culture shock as well for me when I came here, but they want there children to experience everything, they want their children as independent as 3 yrs old. They let their children here play outside barefoot, they just let their children dress by themselves, they play in the sand boxes (improvise) and their children hand went muddy and it's okey. every compound must have children playground with seesaw, merry go round, swing and a sandbox. Every kindergarten must have a playground and bahay bahayan they can play cooking. when they cook, they involve their children to prepare the food, and really good, kase masaya yung mga bata nakikiparticipate sa mga ganitong gawain

Liza hi, I like the way your trying to cook Filipino dishes, way to go. You should use a whole fish and fry till golden brown it makes the fish whole not broken also it taste better. You can use small fish or medium fish to fry. You can put bell pepper and serve with parsley on top.. ❤❤
Escabeche is yummy almost close to sweet and sour with the sauce. Arseni seems to be the little joy of the family cause even Mama Olga carries him while cooking too.

Sorry. not really a eschabeche Filipino style but Russian. Fry fish until well done... a little brownish...saute garlic onion carrots and ginger. mix water. vinegar with salt sugar in a bowl ...then add fish, bell pepper(red, yellow & green) pineapple slices add tomato sauce or a little of deluted corn starch. After plating decorate with slices of spring onion leaves Anyways .... your cooking is still nice ...🎉 yummy!
Good morning Lisa! :) The escabeche you made looks yummy. But, for most part, the Filipino escabeche that I know does not include vegetables like the ones you added. But the one that you made can be your own version of escabeche. I suggest the next time you make escabeche, try making it with lots of ginger and ADD scrambled eggs on top of escabeche, AND "add" oyster sauce on escabeche sauce for better flavor. I promise, it's gonna be yummy. I hope I didnt confuse you with my instruction. Good luck! :)

A simple reminder while cooking : Refrain from adding too much salt. Don't combine fish sauce and salt when you cook both is salty. Choose which one of that ingredients you prefer to use in cooking. In that cook book there is a measurement so just follow it. Too much salty is bad to health. It's nice that you have your own version of escabeche just like us we are creative when it comes to cooking.
Hello here. Liza's Escabeche is a different variation/version. 👍👍 The cuts are different, the preparation are a bit different, and the color is darker than the usual escabeches we have. However, it is still on the Escabeche category. 👍👍👍 Even us Filipinos sometimes has our own versions of our home made Escabeches. ❤❤❤
too many version, because dont really know or value tradition. Everybody to create their own. That is why Filipino food is not popular, because it has identity.. The adobo for example have so many variants, somd even have condensed milk or maple syrup.
Therr shd also be vinegar in the escabeche. To let you know, most of our dishes were learned from Spain who conquered us for 300 years, and some from the chinese who migrated here many years ago, and of course, some from the Americans who also lived here and helped us be freed from Spain who maltreated us for so long. Your fish fillets looks so fresh and savory. Here we put garlic, onions, ginger and bell peppers only in the escabeche. It is actually a sweet and sour fish here as commonly called. How nice to see you cooking outside in fresh air. The cool weather there is much better than the hot weathere here. A cool weather does not make people tire easily so one can do a lot of things rather well and efficiently in a cool, fresh air unlike here in the Philippines or some other Asian countries. That is why I am surprised why you all there is sort of liking it here so much. But anyway, makes us proud somehow.

Fry the fish ,set aside.. saute sliced garlic onions ginger carrots in thin size ,put ground black pepper cliced pepper,put water,ketsup sugar little flour small amount of vinegar,sugar,seasoning boil it then pour to fried fish..
