kuya Kyle, might a offer a suggestion the next time you try making kwek kwek again? you might've noticed some parts of batter didnt adhere well to the egg. this is bec you need to roll the egg in flour before submerging it in the batter. the batter will stick to a flour coated egg much better. i noticed its not much crispy, right? the beer and or the baking powder (you should use baking soda next time - just a tablespoon would do for that big batch of batter you prepared) are the ones responsible to give the coating a crunchy texture. mix all dry ingredients together as you did and stir well. when you add the beer, do not over stir it. just stir it to the point that its well mixed and stop...dont touch it anymore. you wanna preserve all that carbon dioxide gases in the batter bec you want that bubbling out only during frying - and this reaction will ultimately give you a crispier coating to the cooked kwek-kwek. baking soda is used if the batter is made with water. since water isnt carbonated, the baking soda reacts with the hot oil during frying in producing gas bubbles to again give you a crispier fried coating. and next time....season the batter with salt and pepper. cheers! so glad to see you're enjoying the pinoy life!

it's been cooked, beer content is mostly water with alcohol. When it is boiled mostly the alcohol content just gets evaporated.
