This video shows how you can learn Beta from the Midgar Zolom the first time you encounter it. The characters used are at an average level that they should be this far into the game in a normal play through. Once you know Beta, you are pretty much set for disc one, as it is a very powerful spell.
Strategy:
The key to this battle is having the Fire materia linked with the Elemental materia on the armor of the character with the Enemy Skill materia. That way, they only take half damage from Beta as it is a fire spell.
Being on the back row will lessen the damage taken from physical attacks and having the Sadness status will further reduce damage. You can use Tranquilizers to inflict Sadness on your characters.
Inflicting the Poison status on the Zolom is very helpful, although, not entirely necessary. Also, using a Graviball is recommended if you have one, as it speeds up the fight, but it is also not necessary.
Keep the HP of the E.Skill holder at max at all times and as soon as they learn Beta, cast it back in the Zolom's face.
A minor side note: you don't need a chocobo to cross the swamp as I inadvertently demonstrated. Just good timing. Or you could use the save trick.
