Hi. This is Joconde.
The weather is getting warm in Korea. I can feel spring in the air.
I made a pound cake that feels like spring with matcha.
It is finished with matcha ganache and matcha glaze.
When I eat matcha cake, you are always surprised that it tastes better than you expected before taking a bite.
Is it just me? I think there is another attraction to chocolate with its cozy yet unique taste.
The amount of this pound cake recipe fits a 12 x 7cm round pan used in the video, a 16 x 8 x 6.5cm pound pan, and the 8 capacity silicon cube pound molds(link.coupang.c....
You can make any of the three molds with the recipe below.
Bake for at least 50 minutes at 160 ℃ in the case of a conventional oven.
If the cracked top is cooked and the skewer comes out clean, it's okay.
If the your oven heat is quite hot, in case of a convection oven, set it to 150℃. If not, set it to 160℃.
If you make it in a pound pan, the baking time is the same.
If you make it in a cube mold, you can bake it for 25 minutes.
It's a very moist and tender matcha pound cake and really great to eat without ganache or glaze.

Ingredients
♥︎ Matcha pound cake
97g cake flour
4g matcha powder
2g baking powder
1g salt
1 egg (52g)
1 egg white (35g)
40g heavy cream
7g honey
2g vanilla bean paste (or 4g with vanilla extract)
70g butter
80g sugar
♥︎ Matcha ganache
2g matcha powder + 20g hot fresh cream.
100g white chocolate
45g hot heavy cream
18g butter
♥︎ Matcha Glaze
13g hazelnuts
2.5g matcha powder + 10 g vegetable oil (organic sunflower oil)
150 g white chocolate

Matcha and white chocolate is simply a match made in heaven. It is a very moist and tender pound cake, ideal for layering and can take heavy fillings. I love the matcha White choco ganache glaze with crushed nuts. What an elegant cake for adults. Thank you always, Joconde's Baking!

I have ever never seen who makes the pound cake like this. Feel like you combine the creaming method and the reserved method together to get a dense, light crumbs, moist and a liitle fluffy cake. I always want to find a way or a clip to combine two of the methods. The cake turn out really satisfied. Thank you for ur video clip.

I tried this recipe yesterday, and here are my feedback: 1. The recipe is for a very small cake, it doesn’t worth the time to bake. Next time I have to triple or use four times the amount. 2. Mine is kind of hard, not the most fluffy and tender as it was claimed. 3. The amount of chocolate for ganache and glaze plus the jam would make the cake very very sweet. I cut the jam and glaze, but the cake is already so sweet. 3. The video is very pretty, but I found it not practical to be used. Maybe it’s just for relax while watching.

My doses : SPONGE CAKE: 1 eggs + one yolk ; sugar 34 gr ; cake flour 40 gr ;matcha 4 gr ; butter 22 gr . No cream, no honey, vanilla flavored. FILLING: Matcha 2 gr + cream 20 gr ; White chocolate 45 gr ;whipped Cream 130 gr. Again a beautyfull cake. I really always enjoy baking with your inspirational vlogs. I have one question though; in an earlier episode you had a cake in the shape of a heart, i.e. Louis Vuitton Damier style tart. Where did you buy this bake form? Rather than doing so much trimming and wasting cake try baking your cake with the pan in a cold water bath. You’ll get much less doming and the sides won’t be so crusty. You will need to adjust baking time but at least there will be less waste. Apart from that the recipe looks delicious and I will try.
