What is andoa dark? Is chocolated that u melted ? Is not well explain the recipe

It's a specific type of dark chocolate made by valrhona, but you can substitute with a different type of 70% since it is very expensive

@@Mrkimsajang technically any sugar where the standard atom bonding locations in the sugar rings are inverted is an inverted sugar so many things such as honey are also inverted sugars. I believe they use inverted suchrose.
