Your description of Ichiran is literally spot on To the noodles to the broth to the underwhelming overall experience. It literally is the worst ramen for everything it is. Doesn’t include toppings, the noodles too starchy/mushy like (even tho ordered firm) and for the price omg just no. My personal favorite ramen in NYC is Tonchin!!!! Literally everything about it is SO FIRE YOU WON’T REGRET 🔥🤤

I was so disappointed in Ichiran. I think the broth tasted more like chicken and it just threw me off. I’m from LA so I’m used to pricey ramen but ya, was not worth it at all.

When Ichiran opened their first restaurant in Brooklyn, I tried their ramen and it tasted great to me. That was my first time trying ramen(the non instant kind) Since then I've had terrible ramen and great ramen. I went back to Ichiran recently(Times Sq location) and tried it again. Still a tasty ramen to me, (Delicious broth/VERY tender chashu/noodles cooked to correct medium firmness)but I wasn't blown away. I would say for me Ichiran is solid ramen. The ability to customize, the customer service and their booths(great for when you just want to be in your own little world) makes it standout to me. A word of advice tho. Go during the non rush hours. It is not worth it to wait 30 minutes in line to place your order. I went during rush hour and non rush hour. For my rush hour experience, the broth was still good and the noodles were decent, but the egg I ordered was ice cold. This was not the case when I went during their quieter time. I also found that I enjoyed my ramen more when I ordered spice level 3 vs spice level 2(That comes down to personal preference tho). I feel it doesn't hurt to try it. Everyone's palate is different and it's a nice experience (If you don't have a long wait).

Ichiran was my favorite ramen in Tokyo but it really is severely overpriced in the States. When Ichiran first opened up in NYC, their "soft boiled egg" was hard boiled and they charged $4 for that shit and this was BEFORE the pandemic!

Wait when did you film this? Cuz when I went Ichiran from like 2018-2021 they had the rectangle bowls and not the circle ones anymore. I would recommend going to the Brooklyn location for Ichiran, its a lot better and they have bigger seating if you want to sit in groups and not have the single stall experience. Also they have a rewards app which you can use to get free ramen, free noodle refill, etc etc.

Nishida sho-ten is the place to go, the black ramen is where it's at. Broth is addicting, includes all toppings for $15. It is sometimes inconsistent with their pork quality but it's fucking solid. Okiboru used to be good when it first opened but it has gone down in quality since. Egg is no longer included in the base price. The pork used to be TENDER but 2nd visit was chewy.

I'm not an ichiran fan, I think it's ok. But it's better when you customize it to your taste, not what's recommended. I have a feeling you like stronger broth. So if you ever try it again you should try strong soup base, and strong oil. Cheers.

Yeah it’s a chain but honestly ajisen in Chinatown NYC is so hard to beat for price-to-taste ratio, it’s insanely good for like $14 a bowl, rivals some $19 bowls I’ve had elsewhere. You should check it out!
