Finnish mead (sima) recipe

Despite being called mead this recipe doesn't contain a lot of alcohol. It is considered to be a soft drink and it is enjoyed like soda. This recipe is really easy to make and it consist basically from yeast, water, sugar and lemon. I hope you enjoy the recipe!
Recipe
Ingredients
4 l water
250 g brown sugar
250 g granulated sugar
3 lemons (2 peeled and juiced, 1 sliced)
large piece of ginger
a pea sized amount of baker’s yeast
For bottling:
Bottles that can hold pressure (for example empty soda bottles)
Raisins
Sugar
1. Making the mead. Peel two lemons and a large piece of ginger. Cut ginger into thin slices. Add ginger and lemon peels to a large pot.
2. Add 2 liters of water to the pot and bring it to a boil and remove from the heat.
3. Add in sugars and mix until they have dissolved. Add the juice of 2 lemons and 2 liters of cold water in to the pot. Add 1 sliced lemon in to the pot and let it cool to room temperature. This takes around 2 hours.
4. In a separate bowl mix a pea sized amount of yeast to a small amount of mead. Add the dissolved yeast to the rest of the mead and wrap it with a plastic wrap and let it sit in room temperature for 24 hours.
5. Bottling the mead. Wash three 1,5 l bottles or five 1 l bottles. Put a few raisins and ¾ tsp sugar in to each bottle and strain the mead using a funnel and a sieve. Seal the bottles and rotate them few times. Store mead in the fridge for 3-7 days before opening the bottles. Mead is ready when the raisins rise to the top of the mead.
Notes:
This mead creates pressure in to the bottles that’s why it is recommended to use bottles that are made for handling pressure. I am reusing plastic water bottles in this recipe but you could use soda bottles as well. If you are using glass bottles, please make sure they are capable of handling the pressure otherwise they can explode.

You shouldn't add the white part of the lemon, as you did with whole slices, cause it makes the Sima bitter tasting.

If you keep amounts about same you can scale it bigger. There are variations to it: 1 lemon & 1 grape, 1 lemon & 2 limes. Here at Finland all lemons are imports so, we use which type is available.

All raisins here in Mexico have so many chemicals, so do prunes, so they ruin fermentation ....so what else can I use?

@@nancun2837 When sima is fermentating, the resulting carbon dioxide is absorbed into the raisins which causes the raisins to rise to the surface. They don't give much taste so you could leave them out or replace with something else dried one. It's to measure fermentation.

This is the only mead Iv seen that has no honey. My understanding is that mead is a fermented honey beverage. Looks good though.

In old finnish sima meant mead but the modern drink has strayed off from being actual mead.

Both can be seen used here for "mead" (sima or mead), while mead isn't as commonly known, most saying sima mean this drink (or vappusima = "first of May.sima") As this is mostly drunk on "first of May" celebration

The procedure is good, but the lemons which are used were not available in our state. So which types of lemons are suitable..
