Despite being called mead this recipe doesn't contain a lot of alcohol. It is considered to be a soft drink and it is enjoyed like soda. This recipe is really easy to make and it consist basically from yeast, water, sugar and lemon. I hope you enjoy the recipe!

Ingredients
4 l water
250 g brown sugar
250 g granulated sugar
3 lemons (2 peeled and juiced, 1 sliced)
large piece of ginger
a pea sized amount of baker’s yeast
For bottling:
Bottles that can hold pressure (for example empty soda bottles)
Raisins

1. Making the mead. Peel two lemons and a large piece of ginger. Cut ginger into thin slices. Add ginger and lemon peels to a large pot.
2. Add 2 liters of water to the pot and bring it to a boil and remove from the heat.
3. Add in sugars and mix until they have dissolved. Add the juice of 2 lemons and 2 liters of cold water in to the pot. Add 1 sliced lemon in to the pot and let it cool to room temperature. This takes around 2 hours.
4. In a separate bowl mix a pea sized amount of yeast to a small amount of mead. Add the dissolved yeast to the rest of the mead and wrap it with a plastic wrap and let it sit in room temperature for 24 hours.
5. Bottling the mead. Wash three 1,5 l bottles or five 1 l bottles. Put a few raisins and ¾ tsp sugar in to each bottle and strain the mead using a funnel and a sieve. Seal the bottles and rotate them few times. Store mead in the fridge for 3-7 days before opening the bottles. Mead is ready when the raisins rise to the top of the mead.
Notes:
This mead creates pressure in to the bottles that’s why it is recommended to use bottles that are made for handling pressure. I am reusing plastic water bottles in this recipe but you could use soda bottles as well. If you are using glass bottles, please make sure they are capable of handling the pressure otherwise they can explode.
