First Macarons in my NEW KITCHEN! | I MOVED TO PORTLAND!

Finally my move is over and done with, and I am all settled into my new kitchen!
I was so nervous about the move because I loved my old kitchen and I really needed my new kitchen to work for making and filming macarons. My first kitchen test was quite successful! ...and then several batches after that FAILED. Completely failed.
So I started testing variables.
1) I opened a new bag of almond flour and heat treated it to remove oil.
2) I changed the oven temperature - trying both higher and lower temperatures
3) I got an oven thermometer to make sure the interior of my oven was the temperature I was setting it to ( amzn.to/458CCEZ )
4) I got a little device to measure both the temperature and humidity in my kitchen ( amzn.to/3RI4cWO )
I realized two things with my testing:
1) Humidity (unsurprisingly) is a new hurtle for me, and
2) My new oven needs to stay on a lower temperature, which requires a much longer bake time
With these realizations I did three things:
1) I bought a dehumidifier for my kitchen ( amzn.to/45g6IXj )
2) I bought a small convection oven for my countertop so I could bake more quickly and get into filming content more easily ( amzn.to/45i6MWu )
3) Switched from resting my macarons to the no-rest method to avoid my shells absorbing moisture
Finally, with all these positive changes, I got a really fantastic batch of macarons!
Now I feel like I have a great new system in place - while still using my exact original recipe - to produce fantastic macarons! It can be so hard and frustrating to figure out how to best make macarons in your home kitchen, even if you are experienced like I am.
I hope you enjoyed seeing a bit of my new home and kitchen, and that it was helpful to get a glimpse into my process of creating macarons with a new kitchen.
Now that I'm all settled into my new space, I am so excited to finally bake and produce more again! I have so many recipe ideas I want to try out and it has been weeks since I've had the time (or a kitchen) to try them out. Thank you for the great video, it was incredibly timely for me! I got a new oven, and have been experimenting with it, trying to find the right temperature and time. Also, I used to use the oven drying method, but my new oven PAUSES if you leave the door open. So I'm trying to figure out how to make it work. Thanks for letting me see that I just need to continue to hang in there and figure things out. Sorry if you've mentioned this elsewhere, but what kind of teflon sheets do you use? Thank you so much for your inspiration!

Thanks for all your videos! I’ve tried several recipes and methods for my shells, and your recipe and method seems to work the best for me. Furthermore, your fillings are amazing! One question I had was that in the video you mentioned that you realized you needed to use the no rest method while waiting for your dehumidifier. Why is that? My intuition would be you would need to rest longer if it’s more humid, not shorter. Thanks for your insight, and enjoy your great new space!

Thank you so much! It can depend, and some people have different results as far as no rest / resting longer. Initially I thought I should also rest longer so the macarons had a longer time to form a skin… but I think without a convection oven setting or fan setting that did not end well for me! As the macarons sit out the sugar inside can start to absorb moisture, so that along with the current oven I had just couldn’t handle the long rest situation. Now with no-rest, the macarons have zero chance to absorb humidity after being piped and my oven likes that much better!

Hi, I love your videos. Thank you very much for this kind of videos because, in my case, it helps me a lot to solve the little problems I have with macarons. I wanted to ask you one thing, when you say that the macarons came out badly because of the humidity in the environment, what is the humidity you recommend to work with macarons?

Thank you! There is no humidity I “recommend” - you just might need to adjust parts of your bake to reflect where you live! The humidity level in Portland is about double what I am used to in Minneapolis, so while it is not bad it is definitely new to me!

Love this video! I have issues with humidity too and it’s nice to see your solutions. I do have some questions though. Was there anything different you needed to do for the no-rest method? (Maybe I missed it). I feel like if you could get away with not resting them, why would you ever rest them? I thought that not resting them would result in cracked tops and/or no feet. How is this avoided? Also how does the convection oven combat humidity? Or is it a combination of no rest + convection? Thanks!

Convection ovens or ovens with fans tend to bake more evenly and more quickly! So if you have macarons that have absorbed some humidity and then they are slower to bake in a non-convection oven, I find that it is much easier for those macarons to become lopsided. Some people prefer no-rest methods anyway, but I found in Minneapolis that my oven and kitchen worked better after resting my macarons. It really depends kitchen to kitchen, oven to oven, and chef to chef!

Hi Maddie I use your macaron recipe for my macs and they always turn out perfect! I use parchment paper but really want to use Teflon sheets but they make the feet on my macs all crumbly. Do you have any idea why this happens?

Thank you so much! Hmm I have honestly never heard of that happening with macarons on teflon sheets before! It might have something to do with either the pan you are using or the oven you have, but I'm not sure. If you want to switch from parchment paper, you might also want to try silicone baking mats!

It’s the kind of Teflon you’re using. You need to use the Teflon with a shiny surface

You must tell people that after piping, you should give a tap so that macrons set nicely on the baking tray. Good work tho
