This video is about the first use of an amzchef pasta maker set for our Kitchenaid stand mixer. We made a very light fresh plum tomato sauce and fresh pasta for dinner tonight. It worked great and the pasta was amazing. This video is sponsored by amzchef and the set was provided to us at no charge.

Your wife has my grandma's hands and this video was the best, It reminded me of her. Please thank your wife for letting us be in the kitchen. I love watching both of you cook/dehydrate/can from your garden.

That is what happens when you get arthritis in the joints. She doesn't like being in the videos but didn't want me to use her mixer and new toys so she put on the apron and took over. Thanks for watching.

I agree. I know URHC referenced arthritis, but I didn't see that. I saw a lifetime of loving in those hands-cooking, sewing, needlework, changing babies, bandaging skinned knees, all the thousand everyday things she's done to nurture her family, just like my grandmother and mother did. Nothing is more beautiful than Grandma hands.

Brings me back. I would sit and watch my mother and grandmother make pasta, ravioli, gnocchi, pizza dough, etc. all from scratch. The huge cutting board on the table. They would throw 5-10lbs of flour on it, make it into a volcano, throw a bunch of eggs in it, among other things. Gradually hand mix it all together, no appliances. Hand rolled into long streams and cut up for gnocchi. or for pizza dough, or hand cranked into a pasta machine like the old one you had. Those multiple trays of Sicilian Pizza on Saturday, to eat through the weekend. I feel as if this is a lost art, as you don't see anyone doing it anymore. Thanks for the memories.

We were good friends with a big Italian family when I grew up. They did the same thing and made sauce with wild mushrooms they found in the woods. In the spring it was served with a big dandelion salad. They were right off the boat and brought amazing recipes from Italy with them using easy to find wild ingredients that many would pass up. They made the best fried burdock that I haven't had since then. These attachments sure make it easy for those of us with arthritis to crank out fresh pasta. I think one good thing comming from the pandemic is people are starting to learn to make items like this now and once you taste it it's hard to go back to commercial pasta. Thanks for watching.

The skills of home making are disappearing in our culture I hate to say, perhaps with your video it may inspire someone to learn how to make something in the kitchen rather than buy it. Thank your wife. She is trouper and so lovely. I also had a hand crank machine to make pasta and just bought the attachment for pasta for my Kitchenaid. Have not used it yet but will once I can get out from under all the canning. LOL! It looks so much easier. Thanks. I will be watching.

Nothing beats homemade pasta and sauce. The pasta dough freezes real well too - I vacuum seal it and then take out as needed. Might have to get one of those mixers and that set. My arthritis is making it impossible to crank my machine and kneading dough by hand is getting really really hard. Thanks for showing it.

I love making homemade pasta! This video was a perfect teaching tool. Right down from sauce to finishing up the plate with parmesan cheese! You two work great together & the Boss train you well, lol.

They look exactly like the 3 piece pasta set I bought from KitchenAid some years ago! I love making pasta sheets & then making cheese spinach large-size ravioli. I freeze them uncooked on a baking sheet & then vacuum seal them for the freezer. Homemade pasta is so much better than store bought.

Love your blog. A helpful hint about boiled pasta. For longer termed storage. After boiling rinse and drain once for now use. Rinse more and drain to cool pasta, coat well with oil .freeze in freezer bag. Good for a couple of months. You can use a cheaper oil, portion bags, just drop into boiling salted water. Most of the oil will boil off pasta. You may have to recoil with olive oil for taste after draining. You don't have to let it thaw.

This video inspired me and I ordered the set. Love them and oh my goodness, the fresh fettuccine made with an old Italian recipe was out of this world! The amzchef pasta maker and cutter set performed flawlessly! Thanks for turning me onto them.

Homemade pasta is amazing. I got a Phillips pasta maker thru airmiles a few years ago. Use it once a week. Best thing is the parts can go thru the dishwasher. I also use barley flour, 1/4 of the amount called for, to get more fibre and make it more filling. Not as gritty as whole wheat flour.

Homemade pasta is the best and your sauce looked delicious. Sure, you can trim the pasta sheets the next time, but for the first time use 4 foot spaghetti is just fun. Bet the grands would enjoy that. If you like flavored pasta you could blitz some of your dried Principe tomatoes and add the powder to the dough or use dried chard/spinach. Lemon pepper is a nice one too and just needs olive oil or butter to dress it. I just have the hand crank but it's also great for egg noodles-super fine and thick kluski. BTW, The Boss is a beauty. Nice to see her. You are one talented couple. Thanks for sharing.

After I run my pasta through into sheets, I cut them to the size noodle I want for length. They seem to go through better with a cut side going in, too.

I used to make pasta with a great aunt. She was an expert! She would have pasta hanging to dry all over the 2nd floor. LOL If I woke up in the middle of the night I was startled for a second. I've been debating getting attachments. I'm just not sure if I'd use them often enough. Do you have the meat grinder? Your noodles & sauce look delicious! The 2 of you make a good pair making videos!!😊👍 Maybe if you get one of those straw mini brush cleaners it would work to clean the attachments.

We have a separate meat grinder that is very old and works good. If that goes we probably will try that attachment. I was also thinking a firm toothbrush would work. Nothing really sticks after drying. It's expensive if you don't plan on using it much. If you have strong arms a hand one may be a good way to go and they can be found at yard sales for a couple dollars. Thanks for watching.

Good job! Next time, put your speed up a notch and your dough will go through easier. I put my Kitchenaid on 4. Use a bench knife and cut your pasta sheets to suit how long you want your pasta. It really does get easier and more consistent the more you do this.

Bon appetit! I would think that the bit about not submerge is because of the grease on the pinions inside. And I think that the brand name is pronounced "I am the chef" ;)

I don't think there is grease. They tell you to lubricate the gears with a couple drops of food grade mineral oil every 50 uses. I think the gears are steel and everything else is stainless. Thanks for watching.

For the "do not immerse in water" recomendation. Cant you wash them , and after that , with a blow dryer remove the humidity ? Keep them in the over, on the stove or other hot surfaces ? It showld be ok, beeing metal.the oxidation from a quick wash and.a.rapid.drying should not occure

I think there is also lubrication to worry about. Our old hand crank one had the same warning. I won't worry about that as the dough is easy to remove when dry. I will not immerse mine. Thanks for watching.

Be very careful with chicken manure. It needs to compost for a while before adding to the soil.
