This week, Lucas heads to The Fish House in Notting Hill, a fashionable neighborhood west of Hyde Park (and thrust into prominence by the Hugh Grant and Julia Roberts movie of the same name). You should try Yorkshire fish and chips. Haddock is the standard fish, and the fish and chips are fried in beef dripping, which gives a crispier texture and better flavour. Also, use malt vinegar, not lemon juice, on both fish and chips. Perfect!

french fries and chips are 2 totally different seperate things. although they are made similar from the same ingedients,fries are cut thin cut and fried quickly to a crunchy bite, where as chips are thick cut, cooked on a lower heat (more of a boiling slower frying) giving them a lighter fluffy inside, and a softer crisp outside. fries and chips have totally different tastes.

When I was a child in the 1950s and 60s fish and chips was cooked in lard or beef fat. It had a much better taste then.

@73dlb Beef dripping ? No decent shop would use that for fish n chips. We had one here that does. It stinks in the shop and the food stinks of it. Not vegetarian friendly and even the seagulls here wouldn't eat them.

I've never seen anyone eat fish off of a plate with their fingers, nor dip chips in their mushy peas before..I'm pretty sure that's what the utensils they gave you were for.

Pickled gherkins and onions with fish & chips is very old school, very few places do that now. And just for the record, fish & chips should NEVER be served with a wedge of lemon, the malt vinegar is there to provide the acidic balance to the oil and add flavour. Also, in the last couple of decades many fish & chip shops have switched to frying in vegetable oil, but traditionally the food was cooked in beef dripping which imparts a different flavour. Few places do this now. Oh, and the skin should be left on the fish - not everyone eats it (I love it, all crispy and coated in batter), some pick the flesh away and leave the skin behind (my partner does this).

Fish n chips is my favorite comfort food. I like any whitefish, but haddock has a little more ocean flavor that you may or may not like. I want a fish that tastes like something. Cod is the lite beer of fish. I like being on the beach and enjoying the ocean, but that's just me. I tend to go with a plastic fork puncture of the crust and an overall malt vinegar drizzle in favor of any dipping sauces. The acid fills in the gaps for me. Mushy peas are delicious, and I use the chips as a scoop with the peas as a condiment. I hate pickles.

Most of us don't really get mushy peas all the time. Maybe a family meal and two pots of mushy peas would go between 5 people. There really is no traditional way. Salt and vinegar but beyond that there is no rules. But I must say my Nan has brown sauce with hers and that is not ok.

Proper fish and chips are fried in beef dripping fat not veg oil or peanut oil. Traditionally English owned chippies fry in beef fat whilst greek and italian owned places fry in veg oil and Chinese owned chippies fry in peanut oil.

Fish 'n Chips, no lemon, no tartare sauce, that's the classic way. No other, served with mushy peas, vinegar (Sarson's) and maybe a little extra salt, but nothing else. 'Nuff said..!
