Biriyani wouldn’t need any kind of introduction, the name itself is a Celebration. There are innumerable kinds of Biryani all over India, and a small Muslim community called Baery’s in the coastal sides of Mangalore ( where I belong to ) make this particular kind of Traditional Biriyani by grinding the spices and nothing comes out of a jar. That’s what makes it unique from other recipes.
But my recipe has a unique twist in it as usual, I marinate the meat / fish in Hyderbadi style then cook the Biriyani in my Granny’s traditional green Biriyani Masala. So it’s a touch of modern twist to the old traditional recipe.
Ingredients: ( Biriyani Masala )
Onion - 1/2 medium
Green chilies - 14 ( as per ur taste )
Coriander leaves - 1 cup chopp.
Ginger - 2 inch
Garlic - 1 small ( 10-12 cloves )
Coriander seeds - 1tbsp
Black pepper - 1 tsp
Fennel seeds - 1/2 tsp
Cardamom - 3
Cloves - 4
Cinnamon - 1 inch
Cashews - handful / half cup
Turmeric powder - 1/2 tsp
Ingredients ( Marination )
Fish - 1kg
Yoghurt ( Dahi ) - 1/2 cup
Biriyani Masala - 2 tsp full
Lime - 1/2 if small 1
Fried onion - 1tbsp
Coriander leaves - 1tbsp ( chopp. )
Mint ( pudina ) - 1tbsp ( chopp.)
Salt - as per taste
Ingredients ( Gravy )
Onion - 500gms / 4 large
Tomato - 2 large
Mint leaves - 1 cup ( chopp. )
Ghee - 1/4 cup
Oil - 3-4tbsp
Ground Biriyani Masala
Salt - as per taste
Ingredients ( Rice )
Basmati Rice - 1kg
Oil - 1/4 cup
Cardamom - 4
Cloves - 4
Cinnamon - 2 inches
Bay leaves - 2
Star Anise - 1 ( optional )
Mint leaves - 10-15 no’s ( optional )
Green chili - 2 ( optional )
Salt - as per taste
Ingredients ( Layering of Biriyani )
Ghee - 1/4 cup ( 1 tbsp on each layer )
Cashew - fried ( 10-15 ) ( optional )
Fried / caramelized onions - 1 cup
Coriander leaves - 1/2 cup ( chopp. )
Mint leaves - 1/4 cup ( chopp. )
Colored rice - yellow / red ( optional )
Saffron - 1/2 tsp ( to be soaked in 2-3tbsp milk )
Note :
- I have used India Gate Sella Basmati, you can use any brand of Sella Rice or normal Basmati. Sella is more like boiled basmati what we get in India but much longer grains and aromatic which is also called as low fat basmati. Takes longer to cook when compared to normal basmati and doesn’t break easily.
- You can use any fish of your choice.
- If you are using yoghurt in the recipe plz add 2tbsp of Biriyani masala instead of tsp.
