Dough starter (面种):
100g (3/4 cup) plain flour (普通面粉)
1 tsp caster sugar (细砂糖)
1 tsp instant yeast (即溶干酵母)
150ml water (水)
Ingredients (材料):
300g (2 1/3 cups) plain flour (普通面粉)
110g (1/2 cup) caster sugar (细砂糖)
1 tsp salt (盐)
1/2 tsp baking powder (发粉)
1/2 tsp baking soda (苏打粉)
1/4 tsp alkaline water (碱水)
140ml water(水)
1 tbsp cooking oil (油)
Seasoning(调味料):
1 tsp five spice (五香粉)
1/2 tsp salt (盐)
1 tbsp water (水)
Some white sesame seeds (适量白芝麻)

Why we need alkaline water to make the dough?

Texture will be different without alkaline water because it allow the pastry to be chewy

今天试做了这食谱,结果非常成功,我是做一半的份量所以所有材料都减一半包括面种, 面种我提前一天晚上准备然后放冰箱发酵到第二天, 面团的糖我减至40g 刚好适合我家人的口味,炸好冷却后边缘还是有催催的然后中间依然软酥不会硬家人都很喜欢😊

Thank you so much for your great recipe, a true recipe that 100 % successful ! My daughter loves (Kap Zhong) 夾粽, then google and found your recipe and since then this recipe often used whenever I make (Kap Zhong) 夾粽 . Today I will make the other 2 types including Kap Zhong as the dough is the same except the filling.

Yaw Char Kwai is using high protein flour and the fermentation period would be different

Kathrine Kwa Teacher, but I read your Yau Char Kwai recipe; it uses plain flour and not high protein. Should I change it to high protein?

Looks v yummy. I always like hum chi peng. 1 thing a lot steps/work if homemade. I think i dont hv patient on the part like "let the dough rest".

Hi Katherine, thanks for the recipe. Tried making a few times, taste good but it is a little bit compact even though have rested the dough a little longer and does not hv big holes. Shld I increase the yeast or baking powder?. Hope to hear from you soon. Thanks.

Hi Katherine, I tried your recipe. My ham chim peng did not puff up like it is supposed to, but it tasted exactly like a ham chin peng. Do you have any tips? Can we bake this instead of deep frying it? What about air frying, have you tried this method?

Hi Kat, I would like to use a cultured live yeast ( levain/starter) to make this instead of instant yeast due to indigestion problem I have. May I know how many levain/ starter I should use please? Thank you.
