Flaky Layers Butter Croissant Bread Recipe

Friday baking this week is about butter croissant bread. These flaky layers of croissant bread use the same dough recipe for 'Croissant Muffin' or cruffins I have posted earlier. They are flaky, buttery, and light.
Flaky Layers Butter Croissant Bread Recipe
Makes: 8 large or 12 medium or 16 mini size
Dough Recipe :
75 grams (1/3 cup) caster sugar
5 grams (1 1/2 tsp) active dry yeast
250 ml (1 cup) warm milk
375 grams (3 cups) all-purpose flour
55 grams (1/4 cup) butter, melted
1 tsp vanilla sugar (1/2 tsp vanilla extract)
1/2 tsp fine salt
200 grams or less of soft butter, for a layer between the thin dough
Methods are in the video above.
Bake at 180°C for 25 - 30 minutes, an oven may vary depends on the type of your oven.

NOTE for my measurements :
1 cup all-purpose flour = 125 grams
1 cup milk/water = 250 ml
Egg substitutes alternative: for one egg :
• 2 tbsp water + 1/2 tsp oil + 1/2 tsp baking powder + 2 tbsp flour. Stir until combined and mix with other ingredients for the dough.
• Flax seeds: 1 tbsp ground flaxseed + 3 tbsp water. Stir and let sit for 15 minutes. (for suitable bread recipe), grain bread.
• 1 tsp baking soda + 1 tbsp white vinegar + 1 tbsp water. Mix into the dough ingredients. (fluffy)
• A half of ripe banana (for suitable flavor)
• ¼ cup of puree fruits (moist): apple, apricot, prunes, avocado, pumpkin (for baking something where the flavor is suitable)

Made these tonight. Oh my goodness! Yummy. Yummy. I couldn't believe my eyrs and tastebuds. House smelling like buttered yeast. The larger the better, like medium and large. My finished product looked just like yours. A tedious project but well worth the effort. You are my inspiration for sure. 71 years old and just found a passion for cooking. Better late than never. Fancy recipe, I love it!!! ❤❤❤ I made it into 3 types, one plain (with sausage and veggies after bake), one with chocolate sprinkles between the layers, and one with grated cheddar between the layers. I don't have soft butter so I only use margarine, but they all turned out great anyway! I also used a pizza roller to cut them, it's neater, faster, and easier than with a knife. Thank you so much for your amazing recipe! I feel like a professional pastry chef lately, LoLoLoL. ❤❤❤

woow this looks so nice and very much easier to make, my son loves homemade croissants but I stopped making them for him because it takes a lot of time, but with this recipe it so much easier to make. Thanks so much

Ayinofu, you're most welcome. Yes, this is very easy to make, only kindly remind you that this is 'croissant bread', is slightly different with pastry croissant. They are flaky and buttery.

Thanks for your replies. I live in VN, room temperature usually is about 37 C - 38C degree . So can I make this recipe in this temperature or I must make it in air conditioning ? I like the kind of puff pastry but I always unsuccessful . Wait for your reply. Thanks so much :)

This is not croissant pastry like those originally from France, but 'croissant bread'. They more on the bready side but I think will be better to make it in a cool place. When I make this recipe, my room temperature with the heater on, in winter time was about 20°C. A fan can help too :)

Hi again Gul, how are you there? I'm great, thank you. Vanilla sugar very common to use in Europe, is made of sugar and vanilla beans or sugar mixed with vanilla extract. Difficult to obtain outside Europe and sometimes can be costly but you can make it at home. Use vanilla extract will be the same. Love you too and thanks so much :)

Renata, tenho certeza que você pode fazer um croissant muito bom. Esta receita é "pão croissant" (pão que tem a forma de um croissant). É diferente com pastelaria croissant. :)

Thank you, yes you can use whole wheat flour. You maybe need to add a little bit of milk/water to adjust the dough. The result will be different.

Hi, I must try these rolls, however after writing the recipe down, the summary of ingredients threw me off. Lol, I have no idea why these other measurements are for. Duh, I wonder if I missed something. Thank you for sharing this delightful recipe. I love to bake so I will get right to it. Oh, before I go can you tell me what "caster sugar" is? I have never heard of it, but I will Google it, meanwhile, can plain sugar be substituted in its place? Thank you.

onlythe lonely, I know what you mean ...lol. Some people wanted the ingredients on the video, some wanted the written recipe that's why I put there. Caster sugar is finely granulated white or pale golden sugar, is the same as plain sugar only that is finer. Thank you for the comment.

À thé) de levure sèche active 250 ml (1 tasse) de lait chaud 375 grammes (3 tasses) de farine tout usage 55 grammes (1/4 tasse) de beurre fondu 1 cuillère à soupe de sucre vanillé (1/2 cuillère à café d'extrait de vanille) 1/2 cuillère à café de sel fin 200 grammes ou moins de beurre mou, pour une couche entre la pâte mince Les méthodes sont dans la vidéo. Faire cuire à 180 ° C pendant 25 à 30 minutes, un four peut varier en fonction du type de votre four.

Looks like you're using softened butter instead of melted is this correct? I found castor sugar and plan on making these today,

This recipe used melted butter for the dough, if you watch the video you will see it. And 200g softened butter between the layers.
