Ingredients:
- 50g sugar
- 3 eggs
- 40g honey
- 100g bread flour
Tips and notes:
- Bake at 160°C or 320°F for 15 minutes, then reduce the temperature to 110°C or 230°F and bake for another 45 minutes.
- I used a mold measuring 14x6 cm. If you use a different size mold, the baking time may vary.
- Keep in mind that every oven is different, so you might need to adjust the recipe accordingly.
- It's important to beat enough air into the batter for the cake to rise. Follow the specified time for beating the eggs. The texture should be thick and the color pale yellow.
- Bake the cake longer if needed until it's firm and fully cooked inside.
- Avoid over-mixing the batter when adding the flour mixture.
- Make sure to use bread flour for this recipe.
Step by step:
Sieve 100 grams of flour.
Combine 40 grams of honey with one and a half tablespoons of warm water.
In a mixing bowl, whisk together 3 eggs.
Incorporate 50 grams of sugar into the mixture.
Using a mixer, beat at maximum speed for 5-8 minutes.
Add the honey mixture.
Gently mix on low speed for about 15 seconds.
Gradually add half of the flour and mix on low speed for an additional 15 seconds.
Add the remaining flour and mix for about 30 seconds more.
Line the baking mold with parchment paper.
Pour the batter into the prepared baking mold.
Bake at 160°C or 320°F for 15 minutes, then reduce the temperature to 110°C or 230°F and bake for another 45 minutes.
