I followed this recipe, but since I made my own buckwheat flour I ended up with super thick butter for cookies instead pancakes 😖 Was tempted to throw it away but decided to bake instead, cookies came out crispy on the outside and chewy on the inside, I actually liked it! 🤭

Ingredients (9 pancakes): buckwheat flour - 1 cup milk (for vegans: can be replaced with any non-diary milk, like banana milk or almond milk) - 1 cup 1 ripe banana or 1 cup apple sauce 1 tbsp of melted coconut oil 1 tsp natural baking soda 1/2 tsp cinnamon any nuts or seeds of choice - a handful maple syrup (optional)
Oddly enough, I came across buckwheat in a chocolate bar from my local European food store. It was lightly crunchy and the chocolate also had pieces of dried banana also which was so tasty I had to start looking for buckwheat recipes..like this one! Thanks!
I just made them tonight. Thank you so so SOO much! They came out fluffy and soft! I used GF baking powder instead of soda and added a tsp of alcohol-free vanilla extract. My mom, was eating them one after another 😂 we are Russian family too so buckwheat is a stable for us also:)

🙂 Well I follow a lot of YT cooking pages. Always think "I will do that this weekend". I never do. This is the first recipe where I made the effort to buy buckwheat flour. Must admit then left it a few weeks (most weekends hangover and cannot be bothered). Finally tried it. It was delicious. I did add more milk to the second batch and that was a mistake in hindsight, and next time I will blend to have a smooth batter (rather than chunks of banana). I feel lighter after eating it, so guessing buckwheat must be better for digestion that wheat. Thank you for a lovely recipe. Edit: I used vanilla almond milk as the liquid.

the buckwheat we grow in Maine is dark bluish...but I made them and they are delicious. They were not as fluffly maybe the flour is old? oops I didnt put in a banana! Better than the classic italian breakfast I used to have, just coffee and cornetto

I haven’t tried it yet. Since I try to reduce carbs, I was thinking of adding butter squash or pumpkin which a a certain sweetness instead of banana. What do you all think?
Not sure why, but I tried it with half cup measurements (i.e. 1/2 cup of flour and almond milk), 1/2 of a large banana, 1/2 tbsp of melted coconut oil, 1/4 tsp cinnamon) and it was a dough, never turned into something that could be spooned off.
Hi, I have a suggestion to list your ingredients somewhere. Either as caption in your video or in your description or in the comments. It was very difficult to follow the recipe as i had to keep rewinding to try and catch it and I actually didnt know if I had all the ingredients when I started.
Nice video. Beautiful presence. Unfortunately these pancakes did not come out well for me. Is it my geographic location? Or perhaps because I used avocado oil instead of coconut because we have to watch our saturated fat-side note, I get very annoyed with all the claims of healthy when there are a lot of coconut ingredients. Coconut is very high in saturated fat.
Hello, these look delicious! Our buckwheat flour looks very brown in color compared to yours, which looks more like the color of wheat flour. Can we use our brown colored one? Or would that have a different flavor and consistency? Thanks very much!
The color on the video is not 100% accurate because of the camera and the light. Buckwheat flour is always slightly brown, in fact even darker than wheat flour. It can never be white. So I guess you have the right one!
you can, but it will affect the flavour and the texture, you need some fat content. I'd recommend to use almond milk at least, or banana milk will also do, and make sure to add some oil.

Which country are you based in? This recipe is filmed in Germany, so the local brand is DM. But pretty much any good quality 100% buckwheat flour will do!
