bread flour '00' Flour and W 320: 19 oz (550 g)
water: 12 oz (320 g)
olive oil extra virgin: 2 tbsp (25 g)
lard preferably 'Lardo di Colonnata di Cinta Senese': 1 oz (25 g)
fine salt: 2 tsp
dry malt or twice this in liquid malt: ½ oz (15 g)
dry active yeast: 2 tsp
Focaccia Genovese (Brine and Topping)
olive oil extra virgin: 2 oz (60 g)
fine salt for the brine: 1 tsp (5 g)
water for the brine: ½ cup (100 ml)
