An easy quick way to make pickle beets is to eliminate the work and expense of using fresh beets by using previously canned beets. Beets are healthy and I happen to like them better pickled. I had wanted to include red onions with the beets but the cost was too high. I save the extra juice to be used in other things such as sauces or for salad dressing. The liquid recipe is: 2 cups water, 2 cups sugar, 4 cups vinegar, 1 tablespoon salt. I often use the leftover beet juice the same as I would use lemon juice to make a flavored water drink. I use the hot water from the canner to wash dishes.
