In the video, I realise I mention 'very soft' when poaching the rhubarb, you actually need to poach it al dente, if too soft, it will fall apart.

I also mention pouring the hot vinegar directly over the rhubarb once it's jarred, let the vinegar cool slightly before covering & sealing.
