Framing the second floor & new construction brackets

What are the turn buckle supports actually called? I love the function. I'm surprised they haven't been used on any of the sites I've been on.

At about 3:13 you are standing in front of a door with 7 studs and trimmers. The opening to the left appears to have even more framing. Why?
