Now this is what I've been waiting for. My Guyanese mother would make something similar to this as a gravy for dinner pretty much every night. I'd mainly eat it over my white rice. Thank you chef for this recipe! It's bought back memories. Happy Easter everyone! God bless!
Fish in creole sauce is a typical dish in St Lucia, usually served with ground provisions. Will try this recipe tonight with my left over fried fish from yesterday (good friday).
Im creole but im from new orleans, Its a must that get a taste of the carribbean life lol a change a scenary is nice. Plus i love to cook as well, trying something new is always good.
This is similar to Haitian sauce, but it's not just for fish and meat. We also have a shortcut version, after boiling our meat- we save the broth to make the sauce. Since our meat is always seasoned (we use green seasoning, varies on the individual), we quick fry sliced onion & sweet peppers, then tomato paste too & then the broth. We let it cook to thicken up a bit, & Voila, Creole sauce, lol! I alwa
thought i was the only Dominican watching his vids.. lol the only thing i would edit is that i make this sauce in the same pan after fryign my fish.. the additional stuff that stays in the pan after discarding some of the oil adds so much flavour to the sauce and i aslo deglaze with some whiskey :)

Do speak patois?? So sad to see that this language is almost non existant in Trinidad...u guys should work hard to preserve it....it is a part of yr heritage as the whole country spoke french creole/back then.
