Fools (the dessert) are at least 400 years old, so they predate parfaits (which were created around 1900). In its youth, the fool was just puréed fruit that was folded into custard. So Chef John's version is a simplified yet more elegant version of the traditional fool.

I do this with fresh blackberries and strawberries from the back yard, with whipped cream and vanilla wafers. Need to get busy and make creme fraiche (your recipe, of course!)
can you chill this dessert in the fridge once you're completed making it to bring the temperature down even more? I'd think all the whipping and prepping of the dessert in normal room temp would make it less chilled during serving.
