Grilling is a huge part of summer and where you buy your meat has just as much to do with the success of your meal as your skill with the grill. Kristina Guerrero met with butcher David Grant to find out what we need to know about buying fresh cuts.

I have over forty years in the retail meat business. Most of what this guy says is total Bullshit. Larger supermarket chains are much more food safety conscience than small privately owned butcher shops. Most of the issues he talks about happen in privately owned shops. How often do you see marked down meat in a privately owned meat shop? What happens to it? Could it be the steaks covered in marinade or seasoning? Do they turn unsold meats into ground meat? Larger chains cannot accept the risk of selling unsafe meats. They have policies in place that include termination of workers violating them. Small business owners are at a disadvantage when it comes to shrink or loss dollars. In a low margin business even a small dollar loss is a bigger percentage of the total sales. What’s in your meat purchase? Look at the label. The USDA states that ANY additives to a retail meat product be listed on the label. Organ meats, eye balls?, will be listed as an ingredient. I do agree with his point about cleanliness. Look under the displayed meat for a good indication of how often the display case is cleaned.

I have over 41 years in the concrete industry, I also watched a butcher show on AE and became an expert, and I am a registered vegetarian, and I can tell you that everything he said is 100% true.

I can tell you as a butcher from Hyvee....we cut our meat fresh and if I don't think it's a good enough quality I'll toss it in the trash. I don't sell anything I wouldn't eat myself

Jeremy Heck good job trying to be noble but anyone with experience knows you are a liar. If you threw away every piece of meat that wasnt hood enough “quality” you would be out of business within a year. Either that or your definition of good quality is very low. That’s something called shrink. You paid for it. But it essentially disappeared. You either grind it up and sell it as trimmings or whatever percentage grind it is. Or you cut it into steaks and donate it. Or if it really is that bad you weigh it up and take it out of your inventory and get credit back for it. You NEVER just throw it away

​@@stephenshaddox6744 I've been a cutter going on 37 yrs. And I believe he means every steak/chop off the saw or end of whatever your cutting, all don't exactly "make the cut," so to speak. Some may be green on the end of say, a chuckroll, and that MUST/IS trimmed off, and THROWN AWAY. Yes, those costs arw not always recovered, and that is shrink. But yes, meat actually DOES get thrown away.

I work at a Vons in the US, we also do not add blood to the grind, and is on the shelf at most 24 hours, then is sent away for woman's makeup.

People pay top dollar for "aged" beef that hangs in a meat locker until it has penicillin growth. Three weeks or more. The penicillin is then trimmed and ready to cook. The reason for this is that the meat is breaking down and tenderizing itself over time.

Maybe this guy does this crap but out of the three markets I've worked in, two supermarkets and an independent butcher shop. None of them have done any of this!! Now everybody is going to think every shop is like this, good job buddy. Fuck over everybody else's business just so yours can have a jumpstart.

Also NO brown on beef is bad!! This is DAY ONE STUFF. It is the meat aging and is not a sign of decomposition! Try leaving a steak in your fridge for two weeks and cooking it when it's brown. It will smell wonderful beforehand, like melted butter. When cooked it will be incredibly tender and flavorful.

It's even better if the beef is raised and fed correctly before it gets to the butcher makes a world of difference if it's been put on a good feed program. It's actually cheaper to raise one that way you know what you and your family are eating. Then find a good butcher make sure it hangs for at least 21 days. All your Prime Cuts dry aged even longer. Then it's all on you not to mess it up when you cook it and you will appreciate it that much more

ChickenBoy YT actually it is cheaper to raise your own. I raise my own and a few extras every year. I sell the extra steers and have mine processed. I spend a couple bucks per pound of beef.

1. I have never seen nor heard of any meat markets regrinding burger with blood to freshen up. Very unlikely any inspected market is doing this. 2. It is actually HIGHLY ILLEGAL to put tongue meat in ANY product without the customers knowledge. This video is mostly false, uses outdated practices as scare tactics and IS NOT AN ACCURATE REPRESENTATION OF THE MEAT INDUSTRY.

​@@ricerocket1985 Thank you, I'm a long-time cutter (37 yrs) and you're right-I've NEVER heard of blood in grinds! That would indeed be a horrible peactice, if indeed it WERE! But it's NOT. I've heard of some market mngrs adding red dye to small batches to make it appear leaner, and THATS just as bad. But I've worked in lots of shops, and things like that are outright FALSE. No tongues in grinds...none of that!!! 🤨

As someone who works in a grocery chain as a butcher for 4 years even one of these things he said people do would get you fired on the spot I haven't even heard of half of this nonsense that he came up with. Redating product is a fireable offense if caught and proven. He is simply trying to get people to come into his shop and I get it, but don't peddle bullshit then tell me to buy from you.

I also work at a vons, and all this is bullshit, our ground beef stays on the shelf at most one day, never seen meat glue, the only coloring I guess is when we marinate some Carne asada, but that's the marinade.

You're actually more likely to be taken advantage of at a local butchers shop than a grocery store. Bigger grocery stores (not supermarkets) have strict standards and policies to follow and people who check to withhold those standards because a lawsuit or a bad review will affect everyone top to bottom. Little local shops can and will get away with murder and charge extra for it. That doesn't mean humans won't be humans in stores it's just far less likely as the consequences are greater for each individual involved.

we do it but we prefer you show your trust in us and buy the grinds we prepared in the morning because we have more important work to do that we must stop in order to make your special order whether I grind it in the morning or grind it there for the individual its the same meat and I don't think a few hours difference is going to make it any better as professionals we do as our customers ask but we never tell customers to request it because as professionals we know what bullshit it is if you don't trust your butcher shop somewhere else I have no problem doing special cuts for people all day long but when I have over 100 pounds of ground beef prepared and ready to go and someone wants their own 1 pound ground fresh that's ridiculous

I always would pick out the chuck roast I wanted and had my meat cutters grind it but sometimes no one was there who could operate the machine or 'it was just cleaned' then I was told management didn't want them doing it anymore ... I finally broke down and spent $600 on a Weston meat grinder. I don't play when it comes time for Meat ... and no one should ever eat ground beef from a tube. It literally has the DNA of thousands of cows in it. Much is scrap; and pieces of fat from piles in the plant are used to make the fat content what they want. Bad Stuff. Should be illegal.

Why is this guy crapping all over his own industry? Half of these ‘tricks’ are bull, only meat glue (transglutaminase) is something I’ve actually seen, its not bad for you and it’s application was mainly to make whole eye fillets keep a shape for bacon Mignons.
