Fried Artichokes

Ingredients
Fresh artichokes
Frying oil
Fleur-de-sel or sea salt
Instructions
Remove the leaves and outer petals. Cut the stem about 2 cm above the line of the petals. Peel the stem, open the flower, starting from the outer petals, moving towards the center of the flower.
Turn over the opened flower, and gently press it to the table, opening the petals. Do not wash the artichokes!
Heat frying oil to 180°C over medium heat.
Dip the open artichoke flower into the oil and press it with forceps or a fork to the bottom of the pan.
Fry the flower until golden color.
Remove the artichoke on a paper towel, sprinkle with fleur-de-sel.
