Fried Chicken Sandwich
4-6 medium sized boneless chicken breasts
2 large eggs
2 cups self-rising flour
2 packets Hidden Valley Ranch mix (4 Tablespoons)
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
Mayonnaise, dill pickle slices, tomato slices, lettuce leaves (for dressing the sandwiches)
hamburger buns
Using a large serrated-edged knife, slice each chicken breast horizontally into two cutlets.  Place each cutlet in a plastic baggie and gently pound to approximately 1/4 inch thickness. Try to make each cutlet a uniform thickness so they fry evenly. 
In a pie plate or other medium size bowl, beat the two large eggs until well beaten. Set aside.
In another dish, stir together the flour, ranch dressing mix, salt, pepper, and paprika. Set aside.
Place a piece of parchment paper on a cookie sheet to hold your breaded chicken breast while they are waiting to be fried. 
Dip both sides of one chicken cutlet in the beaten egg, coating well. Allow access to mostly drip off. Then dredge in the flour mixture, coating well. Place back in the beaten egg, coating it well again. Then, dredge completely a second time in the flour mixture. Place on the parchment paper lined cookie sheet while you repeat this with each chicken cutlet.  Allow the dredged chicken cutlets to rest on the cookie sheet for at least 10 minutes. 
While the chicken is resting, place about half an inch of light oil in a large skillet and begin heating over medium heat. Test the oil to see if it’s hot enough to begin frying. Place your chicken breast in the hot oil and fry for exactly 3 minutes on the first side. Check to see if it’s golden brown. If it is, flip it to the other side. If it is not, fry it only ONE more minute, then flip it over.  Do not overcook the chicken. Once you have flipped it to the second side, fry for exactly 3 minutes. Check for doneness and add no more than ONE more minute if it’s not golden brown enough. (If you want, you can check with a meat thermometer for doneness. It should register 160 to 165°. )
Serve on buns as a sandwich with toppings of your choice; or just serve on a plate as a fried chicken breast with vegetables and or a salad on the side.

Mmmmmmm. Thank you. A little trick I learned is put a couple of teaspoons of water in the bag and make sure it coats the meat and it prevents tearing the meat when pounding it thin. 🇨🇦🇨🇦🇨🇦

We enjoy making pork tenderloin sandwiches the same way. And with pork loin being slightly tougher than chicken, pounding them out destroys those tough fibers and really makes them tender.

I grew up in Hapeville, GA and I can remember Mr. Cathy and his brother at the original Dwarf House. When they introduced the chicken sandwich that is now Chick-fil-A, it was so new to us and so, so good. He was a nice man. They used to butter and toast the buns....YUM.

Hello Tom and Melissa, my husband and I LOVE, LOVE, LOVE your channel. We just recently started watching and watched the Kentucky caviar video. The hubs mouth was watering 😅. When the video was over we immediately went and bought what we needed to make it. It was amazing!!! Today we made the frozen cheesecake pie and the fried chicken sandwich. ✍Hello Tom and Melissa... Just a trick I learned...before your chicken has thawed its easier to halve that chicken breast. If its fresh chicken you can put it into the freezer just long enough make it firm enough to slice thru it easier to handle. The chicken looks delicious. I was taught that if you stick the end of the wooden spoon in the oil and it bubbles up around it, the oil is ready, it’s hot enough. Just another trick. Love chicken sandwiches, looking forward to making this. Thanks!

Love your clear instructions! We do something similar but instead of the second dip in the flour we second dip into a panko bread crumb/grated parmesan cheese mixture, then rest, then fry. Never thought about adding Chic-fil-A sauce, but it looks tasty!! 👍

Mmm. I want to make this but use Thighs! My SIL did this and after cooking the chicken rolled them in honey garlic and sriracha mixture then added slaw and pickle. Was so delicious!!!!

I made this today and it was absolutely wonderful!! I watched your video several times and when I started making it, I had it on so I could follow exactly. You do an excellent video of step by step and explaining why you do certain things. I learned a lot from this and I can't wait to try some of your other recipes. The Danish is next on the list.

Once again, it's a great video. If you punch the chicken with a fork to make holes and then marinate the chicken in dill pickle juice for at least an hour and add about 1 tablespoon of powdered sugar to flour mixture, you'll have a chicken sandwich that tastes exactly like Chick-fil-a.

Hi Tom and Melissa! This recipe reminds me of chicken fried steak but in a sandwich. I like this idea. I'm definitely going to try it. I've become an expert and butterflying chicken breast. I've never tried chic-fil-eh sauce nor have I eaten at a chic-fil-eh. That sandwich looks really really good.

Good morning Tom, nothing better to eat than something hot straight off the cooker!! The chicken cooked so lovely, I think it is the resting time that makes the big difference. I also prefer the idea of using the self-raising flour. I always used bread crumbs, which is nice but they tend to burn a little if not watched. My brother asked me to make these for our most recent ,weekly , Monday Family Dinner. They were, to borrow a phrase, so good! 😁 I served them with a choice of sweet bun or croissant. Sooo good.

I’m a Canadian who has been living here in New Zealand. It’s fun to see a lot of familiar ingredients on your videos. Americans have everything! We have an “ American” store that brings American grocery products and stuff over. In sure I’ve seen the Ranch dressing powder there. I may have to pay them a visit. 😃
