You can also bake these in a preheated 350-degree oven for 25 to 30 minutes. Make sure the pies are baked in an 11 by 17-inch baking pan. Remove pies from oven and let cool until warm. From there make and heat the glaze, dip the baked pies into the hot glaze. Place onto a cooling rack and let the icing set for 15 to 30 minutes and there you have it. New Orleans baked Lemon and Apple pies. Enjoy! :)

I will negate the all spice with nutmeg. *Please put the nose of your knife on the board before applying pressure to slice, cut, or chop. Hi Brother I grew up on these famous pies. I remember when the factory burned down. My first cousin back in the early 80's stayed sending me to the corner store for the lemon pies. I used to live on the 700 block of Mandeville St. in the Marigny and our backyard shared a fence with the Hubig's pie factory before it burned down. It was the house for the punk band, Sci-Fi Zeros and they would play shows and throw crazy parties there all the time (back before the Marigny turned into what it is now) and we'd always hook them up with mad barbecue when we'd have events so they would give us boxes... yes, BOXES of free pies. We lived off those things. I can't wait to make these. Especially the two best flavors. I'm kind of scared though because I'm pretty sure that yours are going to be better! We love you, Charlie! Your recipes will grace the tables and be passed on to countless generations of people who would otherwise never had the opportunity to learn these timeless techniques and secrets of true New Orleans cooking. I remember when I was a little girl growing up in LaPlace, LA...my dad would come home from work and we'd ride our bike to the convince store to get me a Hubigs pie. I miss Louisiana so much.

This brings back so many memories for me eating my two favorite pies all the time growing up. I didn’t like the round ones but I loved the fried ones. My friends tell me they don’t taste the same anymore, but I’m going to order some and have them shipped to me and see for myself. I’m praying that they do because I will be so disappointed if the taste/flavor has changed. ❤
