My mom fed us with lots of potatoes, so fixed this way is my favorite. If I have leftovers I add a fried egg to it the next day. So yum! Hi sweet mama. We miss you but Sonny Boy is continuing your legacy.

Hello Marshall, just a question please. It said 1/4 cup of oil, but mama said 3/4 cup. Do you know which is correct? Your mama left lasting memories with so many....me included. Love her....and you are a great son for sure keeping her memory and many recipes of hers alive always. Of course we love yours too. Bless you, she would be such a proud mama still. She had the cutest laugh and loved the "tasting" part best. She also was a brave woman keeping her illness to herself for so long. Miss her very much too. ❤
