The squeak of wiping the plate gave my chills down my back. Jerk! Dip the cloth in vodka water please.... Wonderful aesthetic. Reminds me of molecules and electrons and stuff. The fragile tuiles seem like you are setting yourself up for failure though. Not very streamlined...

these fine dining restaurants prepare ahead of time and watch the guest in the kitchen with cameras. As long as the initial courses are out, they start preparing the others. It works in sequence and is prepared accordingly plus theyve got the manpower to do so.

This is a "lunchroom" in Antwerp Belgium. They are open from 11:00 tot around 18:00 and don't do menu's just a la carte. Every plate that they serve is enourmous, flavourfull and full of mindfull preperations. If you eat there (been there twice) you best choose 1 maincourse and 1 dessert, that will already be enough for lunch. If you are a big eater, order two desserts or a extra starter ...

Seriously, 8 min to make a dessert is ridiculous but at least they have the balls, and it was also to show the camera how it's done step by step! Precision is a key for fine dining like that, if you don't care or anything don't talk. ''Why be judged when they know less then me?'' Marco pierre white.
