Completely off topic, Emmy, but I just had to tell you that today was my husband's last day at work - and we are now officially RETIRED! I've long 'envied' you and Paul and the life and time you have together, and now we can finally join you! I've been watching your channel for quite awhile in preparation for this day, enjoying all your tips and tricks for living a frugal, yet abundantly blessed lifestyle in retirement and now, here it is! It's going to seem strange to go to bed tonight and not have to set the alarm!

Since I've been watching your channel for the past few months, I've noticed that I've wasted a LOT LESS food. I hear your voice in my head, and then I find ways of using up the food that I would have previously thrown out. Emmy, you and Paul are a true blessing! Keep on encouraging us! I, for one, am listening! Thank you so much!

My sister had 7 kids. The way she dealt with leftovers was on Friday night, all the leftovers were set out on the kitchen counter. Everybody drew a number from a hat. #1 got first pick, #2 second, etc….It kept the refrigerator cleared out and they didn’t waste food. By the way, she was an excellent cook so even #6 and #7 ate well.

Our leftover gravy always goes either into a casserole or a stew. No one ever says, "oh, so this is how you used the leftover gravy?" It gives it a salty richness that no one can really identify as gravy

It is very easy to make tahini at home. You just need some sesame seeds, oil and optionally salt and lemon juice. Grind everything in a food processor and you will have just as much tahini as you need. And you can store sesame seeds for quite a while :)

I always stand at the fridge, look at what’s there and say, what would Emmy do? 😊 For Thanksgiving leftovers, it great to use your stuffing as your crust, leftover gravy, veggies and turkey as your filling and mash potatoes as your topping. A pot pie of sorts. Great to freeze for next month when time is wonky with gatherings and commitments.

I'm pretty good with food waste, but this year we had an unexpected event that prevented family from coming to the beach for the holiday. I had a 14 lb turkey for just me and my dad. SOOOO .... After eating leftovers for several days, I took the wings and legs (dad and I aren't into those pieces) and made a bone broth. I then took the meat, some pumpkin, a random baked sweet potato and some of the broth and pureed it in my Vita Mix. Froze it in freezer bags and now the dog has some homemade supplemental food. Frugal and he loves it. Just a spoon full a couple times a week. Loved the video!

My absolutely favorite Turkey leftover recipe came from Cooking Light Annual from years ago. It called for a can of sliced mushrooms cooked in butter, but I think I remember you saying that Paul didn’t care for mushrooms… I remembered because my dad didn’t like them either … called them toadstools. But it’s such a great leftover recipe, I felt free to personalize it in lots of ways. Cream of celery soup, sour cream and grated Parmesan, plus your fav pasta or egg noodles. You layered the ingrs like a casserole and baked it at 375 for 25 minutes. Yumm!

I absolutely LOVE ❤️ casseroles and feel bad for people’s families that don’t care for casseroles…… Leftovers, especially meat, is bagged and frozen then used for stir fry, casseroles, omelettes, quiches, soups, etc. Even leftover above things mentioned can be put in a freezer container for a future lunch or even smorgasbord of items for dinners. I used to love my leftovers for my lunch when I was still working…no store bought frozen dinners for me! The internet is so full of information for recipes if anyone needs ideas, like you have mentioned in prior videos. I love your dishes. Beautiful pattern!!! Our left over tips: we usually have vegetable left overs so we either make a stir fry or make what I call a Piccadilly salad, which is a combo of every left over veggie (usually we some roasted veggies, too) with whatever bit of protein we have, then either make a homemade honey mustard or tahini-honey dressing and have a salad feast.

I enjoy making a flaky pie crust for a pot pie, but this year I did something different. I made the Turkey Dinner Pie over on King Arthur’s website. It uses a hot water crust pastry that if you watch Great British Bake Off, then you have heard of it. It’s easy and makes a sturdy enough crust for a loaf shaped pie. They give you suggested fillings, but you can use whatever you have leftover. Just keep adding layers until the pan is full. My 9x5 loaf shaped pie baked for 75 minutes which is longer than the recipe stated.

Loved this video (like all with you, Paul, and Dixie!). What awesome ideas for using leftovers creatively. And your frugal tips and tricks never disappoint!!! Thanks for being real as always. 🥰 My guy Ray always makes ham roll-ups to take to my family's Thanksgiving on the Saturday after. He uses cream cheese, garlic, and chives for the filling. He makes them the day before Thanksgiving so the flavors can meld together well by Saturday. After filling the roll-ups there is always a cup or more of filling left so we use it for dip for veggies and crackers. This year he came up with the idea of putting that leftover filling into our mashed potatoes on Thanksgiving. Oh my goodness Emmy! 😲😋 They were OVER THE TOP delicious! 👏🤩🌟 He says now we'll make them all the time and call them Herbal Mashed Potatoes Supreme! 😂🤣😂 (He loves to watch Gordon Ramsey and therefore likes to create new recipes and give them "Ramsey" names. 😂🤣😂) We're so happy you guys had a wonderful Thanksgiving. Give Dixie a hug for us and tell Paul hello as well. Ray even watches your videos with me now, he really enjoys when Paul has a segment too. We are a retired couple living (and loving it!) a frugal life in Illinois. 💖👌🤗

I can make a good pie crust but understand how intimidating it can be. This is something I learned making a crustless quiche- I spray the pie plate with Pam and then sprinkle two tablespoons of bread crumbs on the bottom and make as usual. We have a goat farm nearby and I made crustless quiche with their Italian spice goat cheese and it was amazing! Thank you for this video. We have overspent on take out the past week because of unexpected company and spent $150 on pizza, wings and antipasto. Unfortunately, my husband and I had to get Covid tests today and I knew he would want to get lunch. I made two tunafish sandwiches and packed them with some potato chips and drinks. It saved us a lot of money. Your videos brought me back down to reality. Thank you for that. 💝💝💝

Two left-over meals I learned from my mom are mashed potatoes turned into potato cakes --potatoes, bisquick, onion, and some egg shaped into patties and fried...and....cut up cooked chicken added to a cream sauce and served over toast. (Or instead of toast you can put it over the potato cakes!)

Hi Emmy! Thank you for another great video! I would love to hear more about how you and Paul made decisions to help you retire early. I'm in my early 40s and thinking about how to move towards an early retirement. My first step has been to pay off all debt and we will be mortgage free by 2023!

My favorite way to use leftover baked potatoes is to dice them up and make hashbrowns. I do this by adding onion and peppers if we have or a jar of roasted red peppers from the dollar tree into the pan with some oil, salt n pepp, additional preferred seasonings. I serve them with scrambled eggs and a leftnover meat. Walah, makes a great dinner.

These are such great videos, especially for those of who are novice cooks! I hate it when I buy expensive fresh produce, like asparagus, and end up putting it in the compost. $3.99 or $6.99 for compost fodder is DUMB! If it gets pushed to the back of the fridge or freezer, it won't be used. Thank you for helping us be healthy and save money!

I make egg cups/crust less quiches all the time. I find myself with random bits of frozen veggies and always too many eggs. (Our hens haven't gotten the message to slow down for the cold weather). 4 oz of spinach or peppers isn't enough for a side dish, but it's enough for an egg dish.

Hi Emmy and Paul! This is my first time commenting, though I have been watching for a while. I loved your Thanksgiving leftover recipes. I had never thought to put gravy with the meat before freezing. That was a great tip! I made a Thanksgiving leftover casserole a little different than yours. I made a white sauce and added chopped turkey meat and peas and carrots (like the filling for pot pie). I put that in a 2 qt casserole dish. Then I added blobs of leftover mashed potatoes and sprinkled the top with leftover stuffing. I served it with a salad and it was delicious! I often make cornbread to go with chili and we love when we have leftovers. Our favorite way to eat leftover cornbread is to crumble it in a bowl, drizzle honey over it and add milk. Then we heat it in the microwave. Yum!

I use leftover turkey and gravy to make turkey pot pie. Just add a package of frozen mixed vegetables, some potatoes and top with a frozen pie shell and bake. It’s one of the few ways my husband, Ron actually likes leftovers. You share so many wonderful recipes, I wish you would write a cookbook! I can look them up on your site but I’m kind of old school and would love to have a real book to refer to. Please keep blessing us with your positive attitude and practical advice. I feel like you’ve become a dear friend.

Wow, your zero-waste recipes look so good! I have used up leftover turkey in soup, chili, and a broccoli, cheese, and rice casserole. I think the turkey chili was my favorite. Right now, our fridge is making funny noises, so I am trying to use up food in case it dies. Fortunately, there isn't too much in there, because we have been traveling. I don't really want to go grocery shopping now until the fridge is fixed or replaced, so we are having some interesting meals. Haha...

I save everything...I even keep orange peels. I candy them or keep the rind in the freezer to add to just about everything. I take the old root veggies and roast them...I make stock and add leftover veggies and sometimes meat. I use half the meat called for all the time. I make meals around what I have before going to the store. I loved hearing Dixie's voice!
