DIRECTIONS: -Add fruits, malt and grape juice to a pot. Simmer on low heat for 1 hour. Then set aside to cool. -Pulse or blend fruits to desired consistency or keep them as they are (if you like big chunks of fruit in your cake). -Cream room-temperature butter and sugar until lightly and fluffy. Add applesauce, mixed essence, Angostura bitters, orange zest, lime zest. -Mix dry ingredients in a separate bowl. -Add dry ingredients to wet ingredients half at a time and ensure that everything is mixed properly. -Add in simmered fruit mixture and mix into batter. -Add browning until desired colour is reached. -Pour batter in floured/oiled/wax paper-lined cake pans. -Depending on size of pan, bake at 120 C/250 F for 2 hours or more. -Insert toothpick in centre to test for doneness (toothpick should come out clean). -Let cake cool and then POUR malt and grape juice while still in pan. If you REMOVE the cake from the pan, BRUSH the malt and grape juice on. -Remember to store in fridge since there is no alcohol to preserve it.
For years i have been making non alcoholic fruitcake using Malta with my own twist, and everybody loves it,.Your recipe is a good one. I never use grape juice as sometimes it could make the cake taste tart/sour, and as I use less sugar in my cake, just about 1 cup brown sugar, I avoid grape juice .

Okay. Back to this recipe. If I'd like to make this eggless, but alcoholic, do I replace the malt and grape juice with wine when making the fruit base? Eg. Add 4 cups of wine to the fruit base instead of 2 cups malt and 2 cups grape juice? Thank you Reshmi.
I just baked this cake. It looks perfect so far! It's still soaking in Malta! Thank you for the recipe ❤😊 I doubled the recipe and made 2 x 8 inch cakes. Took exactly 3 hrs to bake @140°C (because that's the lowest on my oven, not 120). I find it shrunk a bit after pouring the malta on.

Hi yall. Keep in mind you can still try the traditional black cake recipe. The alcohol in soaked fruits is cooked out during baking process. When you are finished baking you can then soak it with the malta. Just another option to prevent you from soaking a different batch of fruits. Great recipe Reshmi.

@@TasteofTrini I'll give it a go next week and report back. I'm going to use Rice flour, Sorghum and buckwheat. Sounds crazy but they are all gluten free and I had it in a cake recently and it was very good.

Girl I do not know what went wrong. I followed everything to proportion but the cake will not get dry after 12 hrs still wet, I then increased the heat to 300 degrees then it got hard like rock. Soo disappointed
Oh no, sorry to hear this! I wish I saw all the steps to be able to figure out where it went wrong 😢 I just used this same recipe last week and the texture was good. I think it needed to bake a slightly longer at 250F. Did you do the toothpick test?
