The traditional way to start a Bengali lunch, the Shuktoni, made with cow’s milk, sun dried lentil dumplings and flavoured with wild celery seeds, radhuni, is rich in vegetables.

Food Lovers TV you have only seen glimpses of Bengali lunch ! You will see a spread only in Bengali homes *not* in restaurants where they make 4 basic gravies and mix and match :)

Hello there..love your videos,has been binge watching them. However a small request. If you could stop your cameraman from shoving his camera right in your face while you are eating that would be appreciated. It looks like an ultra wide fisheye lens and kind of feels weird. Watch the 15:05 and then 15:15. The 15:15 is whole lot better.

This Bengali course is as authentic as it gets. Awesome. Whats more amazing is how much effort Kripal puts in to present the food as genuinely as possible. He literally pronounced the name of every ingredient perfectly in Bengali and guess that made this a more authentic experience. By far the best food vlogger India has produced.

Why bitter first?..... Bitter stimulates your taste buds. Often in Bengali homes when we suffer from fever & looses taste, bitter gourd is fried & served with rice, just to bring back the taste....

One of the most underrated aspect of Bengali food is the vegetarian part. I was also under the impression that Bengali food is almost completely non vegetarian untill I tried a Bengali Veg Thali. It was one of the best thali I've ever had.

Esplanade has been one of my favourite restaurants since 5 years now. Visit them at least once a week. Their bati chorchori, chitol macher muitha, pabda shorshe are my favourites.

Kerala has a Strikingly similarity to West Bengal and culture especially the Shukto reminds me of Kerala's Aviyal, Fish wrapped with Banana leaf reminds me of Karimeen Pallichattu ( although it might taste totally different) even the staple rice and football fever and even the people look similar ( mostly) and the long history of communism in both the States and not to forget the Literature part and the minority population.

Vinayak Bhat The *difference in spices* is what makes both the states more different than similar. Nigella Seeds , Rajdhuni, poppy seeds , Amchur powder are *Staples of Bengali* cooking. None of these are used in Kerala Bengalis cook in *mustard oil* for most part and also uses Mustard paste in cooking fish , which is very traditional , which are unknown to Malaylees . Also the Bengalis can take pride in their green leafy vegetables which is not so much in Kerala . Using garam masala in cooking fish with vegetables are also exclusively Bengali in cooking. *You won't find* a Kerala fish curry mixed with vegetables , perhaps a mango in season but never a brinjal or a patol . *Kichuri* is very much Bengali , something which is foreign to Kerala even today ! Kerala specializes in using *fresh* raw spices more than dry - Fresh Tamarind too . green pepper if it is available in your backyard . Whole dry spices are used mostly with meat . Coconut oil and processed in every form - toasted, roasted , freshly ground governs Kerala dishes , but not so much in Bengal. ☘Coastal Kerala is similar to Mangalore cuisine. ☘☘Southern and a Northern Kerala vegetarian cuisine is similar to Sri Lankan Cuisine . ☘☘☘Syrian Non vegetarian Cuisine of Kerala can be compared to goanese cuisine , which is the Portuguese gift to both the states ! ☘☘ Palakkadan Iyer Recipes from Kerala are a take on Tamilian Recipes - Brahminical or not I am not sure. Then there is a palakkadan Native Nair recipes which has a completely different take from the rest of Kerala ! A surprising fact that most *keralites also wouldn't know* is that Sambhar and Avial are Tamil Nadu's gift to Kerala . However, Olan , Kalan , puli Inji belongs to Kerala alone says a Royal cook ! The sadya that we see during onam had only 4 recipes , not the 9 yards that we see these days ! Bangladeshi *and* Bengali food are strikingly similar . *Orissa* being its close cousin . Again the Muslim method of cooking meat which is influenced by the Afghans is a tad different from the Bengali Hindus who learnt from them . There is a huge Arabic influence of cooking meat among the Kerala Malaylees . But the cooking of fish is similar among the Hindus and the Muslims . Difficult to categorize , classify and stereotype ? Isn't it ? It is he western way of doing things and we loose so much in the process that we resort to Museums to teach us who our ancestors were and what they ate :))) And +++

Vinayak Bhat Bhat Saheb , Most of these knowledge lives with our simple village folk . rich Information is passed down from their ancestors through oral traditions. This is not just about food . Engineering and construction too . What the Agricultural officers will discard off as barren land , people have used their indigenous knowledge and have made it rich and fertile . And they won't share it with the suit wearing people :) We speak to many such while waiting for the local Buses and trains . Spend time in our Villages and learn *our* sanskriti . They have most of the information :) *Do you Read* Dr B.M Hegde ? - He speaks about food and health . Thank You .

leafonabreeze *thanks* for the additions and the corrections *Isn't* Amchur Bengal's gift to the rest of the world . *Kokum is very prevalent in Maharashtra *and* Karnataka NOT in Kerala. Only if somebody could write the different names of the many kinds of tamarinds that is used . One which is smoked and used ONLY for fish curries - the mangloreans use it as well . *You are absolutely right* - Which Bengali household does not have their own version of Panch Phoren ? Keep it coming !

Hey Kripal, you were asking abt why the bitter item first. So just as far as I understand, i think its because bitters signal the brain to generate the digestive juices/stomach acid, almost like jumpstarting your digestion process. In that context I feel our indian cuisine was so well thought of, like an evolved science, and every item in the conventional meal/thali has a purpose, not just adding the taste factor alone.For example the sour taste from rasam, pickles or even the most commonly used lemon which usually accompanies some protein helps with the digestion process as well, in the same way bitters do. So essentially each one of these tastes are to ultimately allow for good digestion and thereby an efficient absorption of nutrients from the meal.

Vmalladi666 that’s a brilliant explanation. You certainly seem to know the science behind it well. You are right, Indian food is rather mindful especially in the customs and traditions that accompany a meal. There’s a purpose to almost everything. Thank you for the answer.

Yeah man, and I can't recollect where but certainly from an authentic person, I picked up that back in those days, every major kitchen crew, like of some zamindar or any dignitary and of course of Kings and Queens, there would be at least one person who would be somewhat like a doctor, dietitian and a nutritionist combined. It isn't without a reason that all our cuisines are almost perfect ape the region to which they belong considering the climate, water, availability of resources and many other such constraints.

We odisha people call dhokar dalna as besan tarkari.. N bengali n odia cuisine is very similar..... Try dalma n handi randha mutton with chakuli pitha(made with dosa batter) ..n habisa dalma during kartik maaso Or month. Some famous recipes of our odia people...der r more.. Arisa pitha,ata chakuli, manda pitha n saptapuri....n mamy more.. V also have our santula n bhat recipes... We also have chingudi jhola.. We have sukhua(dried fish recipe)..

Being a Bengali myself, that line of "the first drops of rain" for the katla was precious. Bengali cuisine is extremely vast. Glad you got to taste some of the most well known great dishes but please do try to explore more dishes and I assure you that you will not be disappointed. Wonderful presentation from your end. Felt really proud of our cuisines just from your descriptions.

Hello sir. A Complete Bengali cuisine special Episode. Loved this place. In fact i liked the way Chef Subhankar has Maintained it. Really Amazing. Also liked u r words " Sunlight coming in a eatery" i also agree with it sir. It is a positive sign. Also loved the way Chef Subhankar welcomed u & introduced u to the restaurant & the Kitchen. Liked all the Bengali items from veg to non veg, side items & deserts, loved them all. In all this video was a Complete Bengali cuisine under one roof. I like Bengali sweets but this video was a treat to me to know much more about the food. Thank u for this video Kirpal sir.

Typical Bengali's only uses Govind Bhog rice for Payesh, Pulav, Khichdi. And Govind Bhog rice is only grown in West Bengal in large quantity as of now.

Burdwan isn’t a state, it’s a district of Bengal Gobinda Bhog is used for preparing puja ka khichdi, Dhodhi Karma & other recipes. Hence the name

When I was doing my engineering in Bengal,( in my youth) I remember that some of my classmates from Kerala would become vegetarians on the day seafood was served. They did not want to eat fresh water fish as they were used to sea or salt water fish. According to them both types of fish were as different as chalk from cheese.
