thanks for the cabbage share. PS we've started our garden's plants from seed successfully for years; have a fan gently blow on the seedlings to strengthen and 'fatten up' the stems. it really helps/works.

The smaller you shred your cabbage, the better. If it's not producing liquid, you need more salt. I use a tablespoon per head. I look forward to making mine this year from my garden. I've always used store bought

Thank you so much my grandparents had 8 kids and both worked double shifts to make ends meet so i miss this part of having a garden but we did always have a kitchen garden in the city here in Northern Ky I started fermenting for health issues i ve been having and its working but i am getting tired of the same things all the time when you do ferment video i feel as tho i am not doing this alone some how so thank you

I want to say this as to maybe help someone out there that maybe having the same health problem I had a fatty liver after fermenting for a year just a cup a day all my test results came back normal this past week so fermenting is way mre important than just preserving for me and it can help you too

Jen, the bottom of your quart jar would have made a good stomper! A rolling pin without handles would work, also.

We always make hot green tomato kraut. Use hot peppers, green tomatoes and of course the cabbage

I've always made sauerkraut in a 5 gallon bucket with an airlock inserted...slice cabbage THINLY, pound with a homemade stomper (a piece of 2" hardwood dowel, sanded down smoothly), and let it rip, but the next time I make it, it'll be in quart jars (small batches...hubs is not the biggest sauerkraut fan anymore).

You can also wash your hands well and then massage it withe hands for a while..Remember you want enough juice to cover the cabbage when you jar it.. Ninette Bird- The Caribbean Wife.

I was so glad to see you do this! I remember, about 70 year ago, my German grandmother used to make sauerkraut in a large crock. She would sit it behind the kitchen door for I don’t know how long but it seemed like forever. She always put some dill in hers. It was so good. Grandpa would kill a hog and we would have fresh link sausage and kraut, soft fried potatoes and a big glass of ice tea. I wish I could find some sausage like they used to make. It was delicious. We would have it for breakfast and dinner and drown it in Log Cabin syrup and then lap it up. You really helped me stir up some good memories. Thank you so much! I love your videos and your children are so cute and sweet. That comes from good parenting. God bless you all!

You are going about that the hard way, my grandmother just packed a jar with cabbage, pound it tight in the jar, added 1/2 teaspoon of salt, and let it set, it turned into Sauerkraut

We did it that way too but every single person showing it now does it in a bowl and squeezing it and beating it then put it in the jar. We used to take turns packing the jars and shredding the cabbages to give your arms a rest.

Love sauerkraut snd have 2, 1/2 gallon jars fermenting in my kitchen now. They should be ready by the end of the week. I like mine to go about 3 weeks.

I just made kraut last week!!! I added an onion and a anaheim pepper in mine, if I had a green tomatoe I would've added it also lol but didnt! Mine turned out really good, I made it because my husband has been wanting beans so I made kraut to go along with it! Thanks for another great video!

Wish I could eat fermented foods. But they give me such stomach pain. I miss sauerkraut so much. Love the lights in the greenhouse. I'm canning corned beef right now. got 4 large corned beef at costco. They made 35 half pints of meat. Love hash!

I tried making it not long ago when you did your last....I completely messed it up...left it in an area that I thought the guys wouldn't mess with it and they poured it out thinking I done lost my mind leaving old food out🤦 😭💚🌱💚 I will be adding purple cabbage next time for color

Ooooh you two have that blame tossing game down really good...LOL Had me laughing watching you bat it back and forth like that. Did you ever find the stomper? Mine is so big I don't think I could lose it if I tried. Every time I see those new fancy lights I start drooling! I was still using shop lights last year and need to wait until I get moved to see what I will need and I am having the hardest time waiting. I feel like I'm about Rae Rae's age wanting that special thing for my birthday and that's months away. Ugh! LOL Those newer lights are so cool! They didn't have them back when I was working as a propagator. Oh and by the way, before I forget...I wanted to share with you about a couple other things that will help reduce the legginess. Light is key, but another very important thing often overlooked is how important air currents are in helping to keep plant stems from becoming leggie. It's like going to the gym for plants, or doing weight bearing exercise in a way. You can mimic the effect by just running your hand or even try using a large feather across the tops of the seedlings a few times each day It makes a big difference in their sturdiness. The cell walls won't be so tender, and something about that pressure exerted again'st the stem and branches sends signals to the plant to bulk up. Peppers respond especially well to this method. Another thing recommended in classes I took is to set up one of those oscillating fans that offers something more like what they would experience outdoors with breezes. Set it up so it just skims the plants gently. You will need to check the watering more often as the air will dry out the plants faster, but it's worth it for the added stem strength you will achieve in the long run. It also toughens up the leaves making them more ready for being out in the wind and rain etc. I noticed Jess was recommending something similar in one of her videos this week. In college the instructor mentioned how having the air above the soil cooler and soil warmer also impacted the stoutness of the stems and branches. Heating soils aids in speeding germination but evidently also helps keep the plant more stout. It may in part be why professional growers use bottom heat for the plants they grow. Slower growth on top because of the cooler air and root production increased by warmer soils creating a stronger plant. Anyhow, just some things I learned I thought you might be interested in hearing about.

You can just dig in with your hands also. Squeeze and punch it. If punching it just be careful of the pink salt scratching your knuckles, squeeze first then punch.

Rae Rae and Wyatt are so adorable. My Momma used to can Sour Kraut and then let them sit on the shelf for six weeks. I love Sour Kraut so that used to be the longest six weeks of my life lol. God Bless Y'all.

I have my grandma's 10 gallon crock and a crock press/weight that she would put on the cabbage to ferment. My dad shared that when he would come home from school he would dip a bowl of sauerkraut out to snack on. I'm wondering how long 10 gallons lasted??

We make it yearly from cabbage we grow same way but sometimes we add caraway seeds 1/2 tsp to jar we like it that way too.

Ferments or cultures put off gasses or fumes that are all different and they can cross contaminate by air. It’s crazy I know but it has happened to me lol

Nope! You can transplant them and bury them deeper so you bury most the stalk :)

First time I made sauerkraut, I put way too much salt when I open the jar after 2 months , OMGOODNESS it was so salty . Me and my husband make the most silly faces Lol . Thank you for this video , I have a cabbage in the fridge and try it again today.

@@joanneganon7157, the flavors would mix due to the wild yeast in the air. It is a good practice to keep like ferments together and separated from different types. Kraut flavored kombucha would not taste very good.

@@joanneganon7157 If you look at a red cabbage and notice the white powder that covers the leave on the outside, that is a type of wild yeast. Years ago I saw an Appalachian mountain recipe for making sourdough starter using the wild yeast from those leaves.

Carol Young fried pork chops or brats sausages. Fry the meat then add the kraut. Sometimes we were so poor we had it with fried hotdogs
