What's confusing you is the fact that while the UK is in it self a country, it is also made up off four political entities (England, Northern Ireland, Scotland and Wales) which in turn is also often called countries. Canada and the US is two separate independent countries. A more fitting comparison would be if someone called a Texan an American. Texas is a political entity subordinate to the United States of America, just as England is an entity within the United Kingdom. Someone from Houston is both a Texan and an American. And while I'm pointing out mistakes in your comment, I should point out that it is completely possible to be of more than one separate nationalities at the same time. You can carry dual citizenships or identify with multiple cultural heritages for example.
