JAN.17 2020 I am Helen from Ga. I enjoy Cooking all kinds of Southern foods. I love cooking Chicken and Dumplings and Lacy Cornbread. love having a garden and growing all kinds of things here in Ga. I love walking in my woods. I love My Birds and Sunshine days . This is my peaceful place. How in the world can anyone give this video a thumbs down? I’m from Louisiana and there’s nothing as relaxing and heart warming as there is just being in a kitchen with a good hearted Southern Lady talking and teaching while she cooks ❤️❤️👍🏼👍🏼

I am 46 and grew up the same way Ms. Helen. We drew water from an old well, heat it up on our old coal stove and took baths in a metal wash tub. We had an outhouse as well as we didn't have any indoor plumbing. My momma canned foods from the garden that we ALL had to work in and my Daddy would squirrel hunt and he killed "many-a-chicken" (as we say here) for our supper. Times were so hard back then, but I wouldn't change it for anything. It makes you appreciate things more in life as you get older and never take anything for granted.

That is so nice! I also grew up in a large ancestral home that housed some 3 or 4 (extended) families. Cooking was done in an attached outdoor kitchen shed, put together by my great-grandfather in the 1940s. (It survived a world war!) Reason being is that should there be accidents, fire will not spread to the house. I remember in the late 1970s when the women of the house would cook on early mornings when the moon can still be seen. Oh' the aroma of dried fish and meats being fried for breakfast! And the adults telling us youngsters: "Be home early.", "Do your Homework.", "That's not the way to sit!", "Don't see ---(some guy's name)--- because he dates other girls.", or simply tell us to help in the kitchen and overall house chores. I also like it when kids from the neighbors come after school. My grandma would put the TV out in the shed, so we can watch afternoon Teen Shows and Soap Dramas, until the parents call them home one by one. Looking back now, that was quite a favor our Grandparents did for our neighbors. I could imagine the parents working, but were at ease because their kids are at our house, safe and together with us. Golden Times!

LEGIT Brigade - We were "dirt poor", but happy. Momma always made sure we never went hungry. We didn't have TV until I was around 8 and even then, it was only 3 channels, and was so snowy, so my sister and I relied on our imaginations. My Daddy would make us homemade toys (homemade slingshots and homemade bow & arrows that he made from wood he got out of the hills, and my favorite was a "teeter-totter" that he made. It was just an old, long board that he nailed to a tree stump (he used an old rusty railroad spike (nail) that he found somewhere. It didn't go up and down, like a normal teeter-totter, only went around in a circle, but it was SO fun. He also made us a tire swing from an old tire and rope he got from someone. I loved my Daddy's homemade toys over ANY store bought item any day! None of my friends grew up the way that I did (I am only 46), but I wouldn't have traded my childhood for theirs in a million years. It made me who I am.

You are such a sweet lady. I was born in Texas 65 years ago, but my parents moved us when I was 4. I still have great memories of Grandma and Pawpaw. I took the train when I was only 9 from California to Houston to visit them. They were also so loving. Watching you I feel at home, and welcomed. Thank you Miss Helen for bringing me into your home. I’ve never made dumplings and I’m going to try tomorrow. So glad you’re on the recovery road. ❤️

I flavor mine with chicken bouillon cubes and butter salt and pepper. And cut them with a pizza cutter. So easy but delicious. My grandma used to have my daddy wring a chickens neck and shed pluck it in a big steel tub of boiling hot water. Im glad i got to witness how it was done. We swam in that same wash tub lol. Or we thought we were swimming we sat in it lol

Helen I too was sick for weeks and no taste. I had it back in December. Coughing and weak. I think covid19 was out way back then and they didn’t tell us. I thought it was weird when I went to the dr after being sick for 2 weeks and she said if it’s not gone in 3 more weeks come back. 5 weeks was what my son was told in November when he got sick first. 5 weeks!! We were told this by 2 different doctors. I’ve never been told that for the flu. I know you are feeling better now. I’ve watched other videos. Just thought I would mention my experience up in Canada. Love you 😘❤️🙌🙏🏻

This is how grandma made chicken and dumplins. The chicken was grown on our farm. A few chickens were kept in a separate pen. She fed them, cared for them and when they were ready, she killed a couple, cleaned and then cooked them. There was so much fat that the broth was dark yellow. Then she made the dumplins like you are doing. They were the first pan empty. I learned from her. We grew everything we needed. I loved her food then and now I'm the oldest in the family. I cook her way.Watching you is wonderful. You are like my family now.

So sweet to see you using a percolator! When my mama passed away I took hers and started using it because it felt like i was there with my mama in the kitchen. It just makes the best coffee and is comforting to use. You are such a precious gift. Thank you!

My mouth is watering! We call these dumplings "Slickers#!!! Yummy I don't care for dumplings made with Self Rising Flour!!!! I grew up in Georgia threw elementary school. We had Electricity and after a few years we got a pump put in our well. We had a kerosene stove and a fireplace in every room. We had an outhouse, a two seater!! I remember picking cotton at my grandparents.

Awww Helen, I'm so sorry you've been so sick, but I sure am glad you are feeling beter and getting your strength back. I love listening to you. I'm almost 60 and so I've lost all my grand parents and both my parents. Hearing you is just so comforting and I can feel love coming from you. My daughter and her family lives in Soperton now and my daughter works in Dublin at that Deli in a shopping center. I don't remember the name of it. I go visit her and my grand babies. I miss them so much because up until a few months back my grands were with me practically every day since birth. I took care of them for my daughter to work. I also come up for the Promise of Hope's annual women's day of blessing in Dublin that benefits the Promise of Hope rehab center. You probably know about it. But anyway I love you so much and you are so warm, loving and kind. I hope Cody gets well soon. Now I'm going to watch you roll out dumplings like I use to watch my mama do. They were always so delicious!

Oh HELEN!! I've been so sick right along with you since Christmas !! I know exactly how worn out just making your chicken 'n dumplins and corn bread made you, but you carry on anyway and we appreciate ALL the effort and creativity you put into our video. Yes, what's going around has made many people the sickest they've ever been in their lives! We'll never forget THIS challenge ! So we'll just take it easy on ourselves. BE the slow person (and give someone else the opportunity to help us out ! !) Ms. Helen. I'm so sorry to learn you have been sick. I can't imagine how you had the strength to do all that cooking. We have had the same illness and it kicked our behinds. So weak we had to stay in bed for two weeks. Our dumpling recipes are very similar. I have not made the lacy cornbread but I will. I have made the hot water version. My husband LOVES your pecan brittle recipe and so do I. I prefer it to the peanut one. Thank you for being the precious person that you are and being so kind and generous to share your life with us. I love that i learned early how to make chicken and dumplins early in life. Its my favorite. If i had to wait on someone else to make them id never get them lol. I hope you recover faster now.

Me. Helen you could have had covid-19 and didn't know it I know that I had a brother and my niece's husband is very sick and at that time covid had come out to right after that. I believe that's why they had. Praise God you all are better

Sweet Helen you have made my day. I am my mom's caretaker she has dementia and unable to tell me how to make lacy cornbread. I've looked up recipes and could not find one that is like Mama's. I found your video on cornbread after watching your newest cement video. I am soooo happy. I will make sure this recipe stays with my family for many years to come

Hi Helen! I am a Georgia girl too & we are tough ladies. I'm like you--don't go to the Dr unless I am very very sick. I enjoyed seeing you make your GA chicken & dumplings & your Lacy cornbread. Add some GA sweet tea & you have a great dinner. Made my mouth water watching you. Your recipie is just like my mother used to make. Try crumbling that Lacy cornbread in some buttermilk---yum! When I was a kid that’s what my aunt and uncle lived on the farm that’s how they lived. It was interesting. I would spend weekends with them and I got to help them with the cows feed the cows clean the barn. My aunt would have my cousin and I go pick veggies. And my aunt always had deserts. I loved being over there in the country. I was born and raised in the city.

I wish you would have a weekly cooking video. I would love to learn how to cook Georgia style!!!!!! There is nothing better than TRUE SOUTHERN COOKIN’ then I could surprise my son and his family when they come to visit from the UK. He is a chef and teaches culinary.

Had made Great Northern beans and ham shoulder soup for my grandkids in overnight Crock Pot for midmorning brunch , and am headed to the kitchen to make your Lacy Cornbread discs to go with it. Miss Helen so many folks have had the flu this year including me. The cough stayed with me for another 2 wks after I got over the fever and weakness. Take care of yourself and its important to stay hydrated so the Gatorade was a good idea. So glad you’re better. Take care and would love to try your dumplings. :)

Wish I still had a percolator. The coffee always smelled so good when it was percolating. Glad you are on the mend as we say here in the south.

I’m so sorry you’re sick Miss Helen but so thankful you’re better.the dumplings and cornbread looks so yummy .I make that cornbread but I’ve never heard it called lacy cornbread.I love that so mine will be lacy cornbread .God bless and prayers you’re all well soon🙏❤️

Miss Helen I am so glad to see that you are feeling a little bit better. My 22 year old son will only make coffee just like you with a percolator. He thinks it is much better then those fancy ones now days. I wouldn’t know because I don’t drink coffee. 🙂 I’m 63 and I’ve never had a flu shot either. I remember my mom taking a newspaper rolled up with fire and burn the pin feathers off the chicken that they had just killed and plucked. You will NEVER forget that smell the rest of your life!

Thank you Helen for doing this video. You will never know how much this Chicken and Dumpling recipe means to me. My grandmother made them the same way except for the the cream of chicken soup. I have searched for so long for a recipe that made the dumplings this thin. Thank you Thank you .from Houston Tx

I’m from Georgia also Miss Helen...my mother made the best lace cornbread in the world...I can’t make it like she did...mine always seems a little greasy....honestly...there’s nothing in the world better than my Aunt Edna’s turnip greens...she used lots of pepper sauce ..paired with my mothers delicious lace cornbread...."it’s was just this side of Heaven...take care of yourself...

I’m so sorry you were so sick. It’s 2021 now and I’ve watched you all year. I hope you have many many many more years ahead of you. You have really blessed me with your videos. I’m going to watch you make chicken and dumplings now. I will have to give them a try. And thank you for teaching me to make them your way. I am 73 and hope to learn another way. Thank you Ms Helen. Hello&Good Well Wishes for you&Cody!! 🙏❤🙏 This reminds me of my sweet Daddy,he was from KY&mtn ppl took their Dumplings&Grn. Beans the most serious!! He raised White Rocks just for Dumplings!!Baked his Cbread in Iron Skillet then would crumble a pc on his plate prior to dipping Dumplings&gravy over it... TFS sweetie!!Take it easy❤

White Rocks are Chickens my Dad would raise just for Dumplings,,they are usually overweight;most would weigh up to 12-15#&have abundance of yellow golden fat when butchered.My Dad would divide the Chicken& fat when home butchering a chicken &put in bags for later Pots of Dumplings. So rich in flavor. I sure miss my Dad. Thank you for your Comment!!❤

Sounds like it. I lost my sense of taste real bad when i caught the covid. Nothing tastes right even with the common cold but this different. Bad headaches too. Missed Thanksgiving with my family but was better in time to spend Christmas with them.
