Southwest Bison Stew/12 volt recipe 

Bison seems to be the protein of the month, and the southwest is a place we've been for the last couple of weeks. So, it seems to make sense that we combine the flavors of the southwest with Bison stew meat for a delicious and hearty stew.
~ Ingredients ~
•1 lb.Bison stew meat, cut into chunks
(substitute: Beef stew meat)
•1/4-1/2 c. onion, chopped
•4-6 new potatoes, skin on,
cut into chunks
•1/4 green bell pepper, chopped
•1/2 jalapeño, seeds removed &
diced
•1 (10 oz.) can diced tomatoes with
green chillies, undrained
•1 (15.5 oz.) can southwest style
corn, undrained
•1 tsp. liquid smoke
•1 Tbsp. southwest seasoning

•1/4 tsp. salt
•1/8 tsp. ground black pepper
•2 Tbsp. yellow cornmeal
(substitute: all purpose flour
or cornstarch)
☆☆optional toppings for garnish☆☆
•guacamole •diced tomatoes
•sour cream •diced onion
•shredded cheese •tostadas
~ Directions ~
Add to slow cooker in this order:
1) Potatoes
2) Onion & peppers
3) Southwest seasoning
4) Liquid smoke
5) Bison meat
6) Salt & pepper
7) Corn
8) Tomatoes
▪Cook 4-5 hours
▪Pull about 1/4 cup juice from stew,
add 2 Tbsp. yellow corn meal,mix
▪Add to slow cooker, stir well.
▪Cook an additional 1-2 hours
(Or until potatoes are tender)
☆serve with toppings of your
choice
~Southwest Seasoning~
~2 Tbs. chili powder
~2 tsp. ground cumin
~2 Tbsp. smoked paprika
~1 Tbsp. dried oregano
~1 Tbsp. ground coriander
~1 tsp.cayenne pepper
~1 Tbsp.garlic powder
~1/4 tsp. red pepper flakes
~1 tsp. salt
~1 tsp. black pepper
☆Mix everything together, store in
airtight container
