Cut them up , throw them in a blender with olive oil and salt to taste. Blend them into a paste, place in a freezer bag and press out to about a 1/2 inch deep in the plastic freezer bag and freeze, break off a piece anytime when you want to add delicate garlic flavor to any soup, stew etc- anytime of the year...Fabulous!!!

I had to harvest my garlic a bit early, because I needed the space for dwarf cherry tomatoes. Being early meant the foliage was still green. I'd never tried garlic greens before. My god what a wonderful garlic butter we made with it. Also fantastic in stir fries etc, etc. Cheers Jeff. Have a great weekend!!!

I hope you see this. I can never seem to harvest my garlic at the right time. I've had several of my garlic bulbs grow the scapes but the scapes are straight up and don't curl as shown in the video. I went ahead and cut them off because it creates a big bulge in the middle of the stem and some were scapes heads were splitting open. didn't know I was supposed to cut them as low as possible without hurting the plant, I only cut maybe 3" off. I'm going to go look for a video on harvesting garlic but should I go back and cut the stems where the scapes were lower or leave it? I do not know what variety of garlic I have since I had some from my grandpa Phillips and then I think some are store bought. I'm Zone 8 in California.
