Gennaro Contaldo's Orecchiette Pasta with Turnip Tops Recipe | Citalia

Learn how to make Orrecchiette con Cime di Rapa with Gennaro Contaldo and Citalia Holidays.
Cime di rapa, turnip tops, are also known as broccoletti because the taste and appearance are very similar to broccoli. This vegetable is very popular in Southern Italy during the winter and often simply sauteed in olive oil, garlic and chilli. In Puglia, this vegetable is served with traditional handmade orecchiette pasta, shaped like little ears. Orecchiette are now becoming widely available in good delis and supermarkets outside of Italy. If you can't find cime di rapa, substitute with purple sprouting or long stem broccoli. Ingredients:
4 x servings
360g dried or fresh orecchiette pasta
Salt
500g turnip tops, clean weight, leaves only, discard stalks
120ml extra virgin olive oil & extra for drizzling
3 x garlic cloves sliced
1 x red chilli, finely chopped
Freshly grated pecorino cheese
Method
Bring a large saucepan of lightly salted water to the boil and cook the dried orecchiette for 15 minutes. Halfway through, add the turnip tops. If using fresh orecchiette, cook the turnip tops first, then add the pasta for the last three minutes.
Meanwhile, in a frying pan, heat the extra virgin olive oil, add the garlic and chilli and sweat until the garlic is golden-brown, but not burned. Discard the garlic and chilli. Drain the pasta and turnip tops and return to the pan with a little of the pasta water and mix well with the olive oil. Stir in some pecorino cheese and serve immediately with a drizzle of extra virgin olive oil.

I'm from Basilicata and we have the same tradition of orecchiette and dishes of pasta with rape...s trascinati in my village.. But unfortunately we are unknown and for this delicious dish is always pleased puglia only like for "cicoria and fave", "lambascioni" and a lot more dishes that are ours too and sometimes have a lot of originality because of the different preparations. ..In my village for example pasta and rape is made with paprika of "peperone cusco" garlic and oil.. and its fantastic as well :).. I'm sad for this widespread fame of puglia only for this delicacy. Ah.. And we also have "pane cotto with rape" that is cooked bread. Ps.. Rape are really a different thing in our territories..(puglia e Basilicata) . They have big flowers with a rich taste which are used with very few leaves around... It's a thing that couldn't be found anywhere else, I always struggle to find it when not here, but never came close. It's not a common southern thing because in Campania they don't use rape (only friarielli that are very different and are not commonly used for pasta dishes ) so I'm here to have the revange for my beautiful Basilica :) come and try

Pasta deliziosa! Grazie mille! And I have a question. What is about the olive oil left in the plate? My Italian friends always used fresh bread to clean the plate carefully...and yes to eat also the bread!!!! Celestial taste! (Mediterranean diet? :)))))Good appetite to all of you.

Tried to get turnip tops and every Greengrocer laughed at me but I a m going to grow my own and try this superb recipe but in the meantime I am going to use Warrigal Spinach instead. which is a native Australian Native Spinach.

Gennaro, perché modifiche molte ricette ? Nella ricetta originale pugliese non ci vanno le olive e nemmeno i capperi. E le orecchiette non sono quelle che usi tu. Ma insomma, per favore, rispettiamo le ricette tradizionali ed originali.

I think he is using “broccoli rabe” in English. Turnip tops would be turnip greens. Which may not be bad, but that looked like broccoli rabe to me.

Where are the anchovies? I am from Puglia and this is NOT the right way to do it... Pecorino should not be used for example. Big show, a lot of talk but nothing to do with the real original stuff. Thumbs down
