I find the cartoon for V-ing a little confusing because the strata still appear horizontal to me, even though they are supposed to be dipping towards the top of the cartoon.

Indeed - in the second block diagram series the strata are horizontal. This sequence shows how outcrop pattern can be controlled by topographic relief. To look at the concept of v-ing in valleys - try the video with that title - and/or the Thermopolis one.

Hi Rob, this is a great video, although part of it halfway through confuses me. How aren't the rocks at 7:06 dipping towards us rather than away from us?

no - (v gently) away, the hilside is towards the viewer... thanks for the question and the comment...
