Eric can make more money from the starch they have been throwing away from the pressing process, and they can also sell the cassava dough for banku. A lot of people don't have time to do this themselves.

@@AliveBlessedGrateful Making starch from cassava involves several steps. Here is a step-by-step guide on how to do it: ### Materials Needed: 1. Cassava roots 2. Grater 3. Cheesecloth or fine mesh sieve 4. Large bowls 5. Water 6. Containers for storage 7. Potato peeler (optional) 8. Blender or food processor (optional) ### Steps: #### 1. **Select and Prepare Cassava Roots:** - Choose fresh, mature cassava roots. Look for roots that are firm, free from blemishes, and without signs of decay. - Wash the cassava roots thoroughly to remove dirt and debris. #### 2. **Peel the Cassava:** - Peel the cassava roots using a knife or a potato peeler. Remove the outer skin to expose the white flesh inside. #### 3. **Cut into Pieces:** - Cut the peeled cassava into small, manageable pieces. This makes it easier to process. #### 4. **Grate the Cassava:** - Use a grater to finely grate the cassava pieces. Alternatively, you can use a food processor or blender to achieve a smoother consistency. #### 5. **Soak and Wash:** - Place the grated cassava in a large bowl and add enough water to cover it. - Allow the grated cassava to soak for a few hours or overnight. This helps to separate the starch from the fiber. #### 6. **Separate Starch from Pulp:** - After soaking, the mixture will have settled into two layers - a starchy sediment at the bottom and a watery layer on top. - Carefully pour off the top layer, leaving the starch at the bottom. - Alternatively, you can use a cheesecloth or fine mesh sieve to strain and separate the starch from the liquid. #### 7. **Repeat Washing and Settling:** - Add more water to the starch sediment, stir, and let it settle again. Repeat this process until the water on top becomes clear, indicating that most of the impurities have been removed. #### 8. **Dry the Starch:** - Once the starch is separated and the water is clear, spread the starch on a clean surface to dry. This can be done outdoors in the sun or indoors at room temperature. #### 9. **Final Drying:** - Once the starch has partially dried, break it into smaller clumps for faster and more even drying. - Continue drying until the starch is completely dry and has a powdery consistency. #### 10. **Store the Starch:** - Once dried, store the cassava starch in airtight containers to prevent moisture absorption. ### Tips: - **Be cautious when handling cassava:** Cassava contains cyanogenic glycosides, which can produce cyanide. While the processing described here helps reduce cyanide levels, it's essential to handle cassava carefully and cook it thoroughly before consumption. - **Experiment with the drying process:** Depending on your location and climate, you may need to adjust the drying time. Ensure the starch is completely dry to avoid spoilage. By following these steps, you can make cassava starch at home for various culinary and industrial purposes.

Great information. Pardon me if I missed it, I did not hear anything about your growing costs like soil preparation, seedling, watering/irrigation costs, weeding costs, etc. Is the land free? You must also subtract these expenses from your sales before recognizing "profit."

Mr. Eric Dotsey is correct in that one must look to value add to one’s product. Garri and Ethanol are two options which he favors. However, a better option would be cassava starch a.k.a. Tapioca. It will garner many industrial buyers in food and pharmaceuticals. He should have a futures contract prior to sowing his crop. This would assure a guaranteed price. He lacks good buisiness sense. Like many Ghanaian males, he was too condescending to women. The cassava queen was a much more business astute than he. Instead making a enemy of her, he should have made a counter proposal to make her an ally.
